What time to eat TS when park hours are shorter??

If you go during lower peak times do you do lunch or dinner for your TS meals? We will be going the first week of March when the parks usually close around 7-8 for MK, 5 for AK, 7 for DHS and 9 for Epcot. We like to do dinner around 5 pm but am wondering if maybe we should do lunches instead. Since park hours are shorter we won't do midday breaks unless we are going to PM EMH.
