There will only be a few rides in each park that she can't do. You will be surprised at how much there is that a 2 year old can do in the parks. Have a great trip. DD's 2 year old first trip was one of my favorites. It is so fun to see the joy and awe on their little faces!
I'm actually wondering this too. My 2 year old son is 39 inches now so he may be 40 in by august but even if he is tall enough for certain rides...I know I won't be putting him on some of those rides anyway.

The first part of your statement is correct; the second is not. Kali has a height restriction of 38", Barnstormer is 35", Speedway is 32" to ride (you must ride with someone at that height; 54" to ride alone).
I've seen Maelstrom quoted as having a restriction of "3 years old" but I have no idea if they'd even ask or if it is real.
