What Kinds of Christmas Cookies Are You Baking?

I love baking and Christmas cookies!! Sounds like everyone has some great ones line up to bake. Here's what's on my list so far (the first 3 are requested (*required*;)) by DH, DS & DD):

thumbprints (with preserves)
rainbow (I forget the "real" name)
peanut butter w/ Hershey kisses
chocolate chip
chocolate peppermint

I also might pull out the cookie press this year - haven't used it in a while

The kids each pick one or two to bake with me too
And I usually mix it up with a new bar cookie or something different as a trial (some get a thumbs-up and others get crossed out of the cookbook!)

I will make pizzelles, wine cookies, snicker doodles, chocolate chips, walnut thumbprints, double chocolate mint and sugar cookies.

I have 13 of the 18 batches done, so I'm off to a good start. I had to ask my IL's if I could use some of the extra space in their spare freezer since our drop in freezer is already full :eek:.
 
I tested two kinds from Food Network Challenge a few years ago. I saw a repeat of the episode weeks ago and thought they sounded tasty. I don't know where they placed in the competition.

Chocolate Chip Candy Bar Cookies-splashed too much orange extract in the test batch and don't care for the flavor so I will probably omit. The caramel kisses really are just too messy and didn't melt uniformly. I will modify the recipe to a chocolate chip peanut butter oatmeal cookie instead for my office exchange.

Emilys Spice Cookies/Harvest Spice cookies-I combined the two because I liked the idea of dried cranberries in the cookies, but the simplicity of the Emilys. I will try subbing in apple butter for one of the eggs in the next batch.

pilotwife, could you post the recipe for the coconut shortbread? That sounds delicious!

We had our cookie exchange at work this past week and this was my favorite cookie that I received!!!


CHOCOLATE COVERED STRAWBERRY COOKIES

1 1/2 cups sugar
1 1/2 sticks butter (softened)

Cream together these two ingredients. Then add...

2 eggs
1 tbsp milk
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda

Whip until very light and then add

3 cups flour


Roll into balls and then roll into sugar. Press center of cookie and fill with strawberry pie filling . Bake at 350* until golden brown. COOL COMPLETELY
Then melt 2 bags of chocolate chips (semi sweet). Dip tops of cookies than flash freeze until chocolate is set.

Let me tell ya....these taste just like a chocolate covered strawberry (could use cherry pie filling if you like that better than strawberry) but OMG were these good!!! Give 'em a try!!!
