What Is The Lowest Calorie Homemade Baked Good?

I've been on a diet and exercise plan now for about two months... so far so good, I've lost 15lbs! :woohoo:

I am sticking to a 1400 calorie a day diet of mostly proteins and fruits and veggies, and it adds up REALLY fast, but I occasionally want a snack other than a 100 Calorie Pack, especially since it's "Baked Good Season"! ;)

I baked some Banana Nut Bread for my husband to take to work, and some Brownies for a neighbor who had surgery, and there were leftovers, and I indulged. :rolleyes1 I can't believe how fattening baked goods are, even HOMEMADE!!! :eek:

Does anyone have any good baked good recipes that are low-cal, or suggestions to lower the calorie content on regular baked goods?

Meringues are a good fat free, lower calorie choice. If you have a Trader Joe's near you, they sell really good ones and you get 4 for about 110 calories. Or if you want to make them yourself, there are a lot of recipes out there for them.
 
I am not sure of the calorie count but I know it's not bad-

1 can diet soda and one box cake mix.
Mix together and bake as directed. We do chocolate cake with diet Dr Pepper or diet coke. White cake, spice or strawberry with diet Sprite. A dollup of FF Cool whip. Does the trick!

1 cake mix, Chocolate or spice cake mix with one 15oz can pure pumpkin. mix well. will be stiff. Spray non stick spray on muffin tins bake for 25 mins at 350. 1 muffin=2 ww points. ( I sprinkle a few Choco chips in sometimes.) Great warm and yummy for breakfast!

So with both of these, am I correct that you DO NOT add all of the other ingredients (eggs, water, oil), JUST ADD the soda/pumpkin pie filling?

Low Calorie Crustless Pumpkin Pie

1 can pumpkin
1 can evaporated skim milk
1/2 cup eggbeaters
Splenda to taste
Pumpkin Pie Spices
Dash of sault

Preheat oven to 425 and spray a pie plate with cooking spray. Mix everything together, stirring well, then pour in the plate. Bake until a knife inserted in the middle comes away clean (About 45 minutes to an hour.)

Tastes just like real pumpkin pie for about 1 - 2 points a slice.
 
Oh, check out the, Hungry Girl website! She has lots of recipes for low cal/ low fat stuff. I get her e-mails. Good stuff.
 
I second the Hungry Girl site (she also has published cookbooks) and the punpkin/soda and cake mix. You are correct- you don't add the other ingredients. Also, what about angel food cake?

The free way is the way to go!! I don't use any one thing enough to keep it around anyway.

Congratulations on losing the 15 lbs.! I lost 10 and I have slowly went back to my "old" eating habits. Not as bad, but I've become reacquainted with my old favorites. I need to look into the low cal side of things again too or my 10 will come back and bring friends.

Thanks! And same to you!!! I think I gained 5 back last weekend, what with my sweets... and we had THREE parties that we went to, and yes, I ate EVERYTHING in sight! :rotfl: I've been better since Monday, but I still feel terrible for eating so poorly!

You are correct. Nothing else but the soda/pumpkin. The soda cake comes out a bit flatter, but tastes great. The muffins are really dense and moist. yum, so easy! And don't worry if you don't like pumpkin, you cant even taste it.
 
If you need a quick sugar fix, arrowroot cookies and graham crackers aren't terribly fattening.
 
I try to stick to Hungry Girl and Cook Yourself Thin recipes whenever possible. Hungry Girl seems to more feature things like crushed Fiber One cereal and Splenda (which actually do end up tasting better than you'd think they would once used), and other low cal/diet things (low fat cream cheese, low fat sour cream, etc).

Cook Yourself Thin focuses on further food substitutions. These range from using zucchini in cupcakes (instead of oil or butter), beets in brownies (again, the moisture element), even homemade marinara sauce and thinly sliced zucchini instead of pasta (again, quite good).

Both of them have a few editions of cookbooks available... I prefer the Cook Yourself Thin recipes, but Hungry Girl's recipes generally use fewer ingredients (making them a bit easier on the wallet).

As a pseudo-baked good I make baked apples this time of year. I core and apple and put it in a baking dish. I use reduced fat butter, Splenda, cinnamon, and raisins (optional). It always satisfies my sweet tooth. You may also want to check out http://www.3fatchicks.com/diet-recipes/. They have some good recipes including desserts.
 
If you are using your favorite banana bread recipe, you can sub apple sauce for the oil. Same with brownies. I don't think they taste AS good, but an acceptable trade off.
 
I second the pumpkin/ chocolate cake muffins. Yummy. Make sure that you are buying PURE pumpkin and not the pumpkin pie filling.

You just mix the two together (cake mix/pumpkin) and bake in muffin cups. Very satisfying!
