What have you planned to see/do each trip, but thus far failed?

For me it is eating at the Kona Cafe. I have dreams about the elusive Tonga Toast with Kona Coffee that I have yet to try. (Great, now I made myself super hungry). Every year I insist we will do it, then we sleep in too late, get distracted by the parks etc. I am determined to make it this year. (A little worried that I will be underwhelmed). So what's your great white whale at Disney that you can't quite catch?
 
The Tonga Toast and Kona coffee really are good.

I have not yet done the Magic Kingdom welcome show, amphicar ride, the spa, or watched the torch lighting ceremony at the Poly.

I've met lots of characters, but always look for less common ones that I haven't met yet. For example, so far I haven't found an opportunity to meet the Penguins, or Huey/Dewey/Louie, or Jiminy Cricket.

Seeing a daytime parade. We typically go in September and it seems to get rained out each time.
 
Kali River Rapids. It's always either been too cold or we've just decided to do something else, instead.

I totally get this. As much as we adore Dole Whip, it can be surprisingly difficult to get. Aloha Isle doesn't open immediately when the park opens, so we are usually on a ride or at another area of the park when it opens, then it can take forever to get the prized Dole Whip once it is available. We have decided that Disney should sell Dole Whip at the park entrance so you could place your order when you get in line and they could hand you the Dole Whip as you enter the park. You can never have too much of this frozen golden magic.

Haven't been on it since 1976... Each trip I swear I'm going to do it, but something always seems to distract me... Ahhhh, the heartbreak of ADHD! Lol

Us too. We never saw LMA because we always went to HS at rope drop and then were gone before the show started.

Last trip we planned months in advance that we would be sure to see it. We went to HS in the afternoon specifically just to watch the show. Started great, then interrupted for weather, we waited, then eventually cancelled. DD saw recently that it has been closed and she was pretty disappointed that we never saw it in 10 years of trips.

It also took us until our third trip to see Wishes. First trip we just didn't stay out that late (Youngest was a baby). Second trip was record rains/flooding/tornadoes the entire 12 days.

I always tell friends and family planning trips that there's just no way to do/see everything. We have gone for two weeks for the last decade and there's still plenty we haven't seen. There's no way anyone can go for 3-5 days and do "everything".
 
I keep saying I'm going to check out Rafiki's Planet Watch, but so far have never done it. This last trip I did finally do one thing I had never done, ride Astro Orbiter, and another thing I had not done since my first trip when I was two, see the Country Bear Jamboree.
