What do you eat for lunch at home?

DH and I are running out of lunch ideas. He works 2nd shift so we are all (the two of us and our 2 year old) home for lunch every day. We eat organic/non-GMO foods which limits our options. If we have leftovers, we eat those sometimes but then that doesn't leave any for DH to take in his lunch.
 
I think if we were in that position lunch would take the place of dinner - we'd cook the meal in the middle of the day and then the leftovers would be "lunch" for the evening meal. When we're out of leftovers we will do beef & havarti sandwiches, grilled cheese w/ tomato bisque, Mac n' cheese with peas & tuna, ramen with goodies like softboiled eggs and inari tossed in. Basically anything we would normally make & have patience for can happen during the day just as easily at night too though! :goodvibes

Today it was an egg salad sandwich.
 
Today it was a turkey wrap with carrot sticks. Tomorrow will be a tomato stuffed with tuna salad. Wednesday will be a chopped salad with apples, almonds and dried cranberries and a slice of multi-grain toast. I haven't planned out the rest of the week yet. A lot will depend on whether I end up going into the office or if I work from home all week.
 

Usually leftovers or salad with tuna or beans. DS3 has a better meal--sandwich, apple slices and milk. He helps make it.

Typical lunches: Organic bread(ouch! $5.69 loaf at Stop and Shop)/organic peanut butter/organic jelly; Organic Mac and Cheese; Organic chicken noodle soup or Organic Amy's Tuscan Bean soup, or any of the other varieties, (we have been buying organic soup from Aldi's!!!) Organic tofu with organic diced tomatoes and organic pasta, and (yes we can even get organic pasta and pasta sauce at our local Aldi's!!)Sometimes we do organic salads with organic dressing, )and yes even Aldi's has organic greens, grape tomatoes and dressing!) Just about any foods out there we are able to find organic/non-gmo. We had some organic chicken sausages and organic pasta with organic olive oil with organic smoothies (organic bananas, organic yogurt and organic OJ) for lunch yesterday, was awesome. Tomato, cucumber and avacdo salad. Just diced all into small pieces and add salt. yummm
 
I usually eat an organic apple cut into slices with a glob of fresh ground peanut butter. I might also eat an ounce of cheese. Something I just fix a whey, banana, yogurt, cinnamon smoothie.
 
Eating organic/non-GMO doesn't limit your options at all.

I make dinner each night specifically keeping lunch the following day in mind. I just multiply the recipe to make enough portions. Occasionally my husband will be extra hungry one night and will eat more of the main course so every once and a while one of us will just have a sandwich for lunch but most of the time we have leftovers. I'm not a fan of "regular" sandwiches with deli meat so I either make a grilled cheese sandwich or have almond butter and raspberry jam (from raspberries in the garden). Sometimes I'll have cheese, fruit, and some nuts.
 
I eat a salad nearly every day. I grill chicken breasts on Monday and use them through the week. I buy a large variety of veggies, nuts, beans, etc. I hard boil eggs, shred vcheese. Once I do all the prep, it's easy to make a salad every day. I love it. I don't get tired of it!

DH works at home, and when I work second shift, we have the same sort of situation as you are describing. When that happens, I cook what would otherwise be our 'dinner' and we eat that at lunch time, and then I make a 'lunch' to take to work and DH has 'lunch' at dinner time.

So yeah, whatever you would make for dinner, eat at lunch time, then whatever you would eat a lunch (like the leftovers), have at dinner time.
 
whatever is in the frig. sometimes i will eat DDs romen if we have leftover rice. after i finish the noodles i will throw in the rice. mostly sandwiches. i like to eat grilled sandwiches.
 
Leftovers here too. We specifically make more for dinner so that there will be enough for lunch the next day.
 
My husband used to work second shift and we always had the large meal at lunch time and dinner would be the light meal. The trick is a light breakfast
 
At one point, DH worked seconds and I worked first. I was less than 10 mins from home so I came home everyday and we had "dinner" together. I would put something in the crockpot on high before I left for work or DH would cook a bigger meal. We would eat lunch foods for our evening meals then. Sandwiches for DH in his packed lunch and the girl and I would have a frozen pizza or mac & cheese or a sandwich.

What is romen? I'm thinking you meant ramen, but why would you eat it with rice? Talk about carb overload.

This is what I would do. If my work times conflict with DH's I make something in the crockpot for his meal and I eat something else a sandwitch or leftovers. Dh needs a true meal each night but I am more than happy to have just a small meal.
