What can I do with this big tub of artichoke dip?

I stopped in Costco today for a couple food items, and they had this Artichoke and Jalapeno dip on sale. Oh, yum - it is delicious. Frankly, I could hide it in the back of the 'fridge and eat the whole thing myself when no one is around, but we all know what could go wrong with that.

I keep thinking I could use it as a base for some kind of chicken dish. (I also picked up chicken breasts, maybe that is what is giving me the idea.) The dip has cream cheese, mayonaise, artichokes, jalapenos, and a couple of spices. I have a pretty full pantry to add to that mixture - any suggestions?

Could you use it as a stuffing for the chicken. Pound the breasts flat, cover with the dip and roll them up?:confused3
 
I'd just pour it over the chicken-or spoon it over, once I'd grilled it. Or, slather the chicken with it and bake it with a mild cheese on top.
 

Add grated Parmesan and stuff mushroom caps with it!
 
How about as a spread on a panini sandwich, like they do at Panera?
 
heat it up and mix it with pasta. Serve it with grilled chicken.
 
Thanks for all the great ideas - so here's what I did:

I browned some skinless breasts in a little bit of olive oil. Put the breasts in a baking dish. In the same skillet with the oil and drippings, I sauteed a bag of baby spinach. Added 3/4 c of the dip to the skillet, along with some mozzarella cheese. Melted the dip and cheese, mixing in with spinach, (making it more of a classic spinach dip) and poured it over the chicken breasts. Topped it with a little more mozzarella and some parmasen, and baked the whole concoction. It was delicious, but the dip did get runny in the dish. That's okay - I spooned it over the breasts when serving.

Because Lilygator suggested adding it to potatoes, I served them alongside. Oh, that was delicious...mixing the sauce in with the potatoes was amazing.

Any other suggestions? There's still A LOT left in that tub.

I have purchased the same thing from Costco, they come two in a package, if I remember correctly.
I froze one and when I wanted to use it, it came out just fine.
Just a thought.
