Disney is amazing at creating an immersive experience. A memory that has stuck for me was eating a Mickey shaped waffle. It's the little details like that which make me love the parks so much.

What are your favourite details at a Disney restaurant?
 
Mine's kind of obvious because it's CRT in the castle, but I absolutely loved walking up that winding staircase for the first time. The trek to the top about killed me with excitement.
 

We eat our 1st and last dinner every trip at Ohana. The girls love being called "Cousin" and just the whole Polynesian theme of the place.
 
The way the lights around the edge of Jiko dim to simulate a sunset.
 
At the Coral Reef, the ceiling lights look like the undersides of sea anemones! That, wavelike light projections on the ceiling, and of course the huge windows on the coral reef tank, all add to the feeling of being “under the sea.”
 
At the Wave, some of the background music is from the Ratatouille score.
 
The two that came to mind:

1) The bookcase between the Mess Hall and the S.E.A. Room at Skipper Canteen. It’s filled with books where the titles/authors are almost all jokes or highly specific references to other things you’ll find in the parks. Most people are going to just walk through and not even notice - and even if you did it’d take some time to look over the whole thing. But they put an amazing amount of thought, effort and creativity into this one small part that could’ve just been filled with generic nature books.

2). It’s not a “small” detail - but some people miss that there’s a conceit within a conceit at Sci-Fi. The drive-in movie conceit is obvious - it’s one of the best themed restaurants on that basis alone. But they went further and added the theming on the entryway to make clear that the “drive-in” itself isn’t real but a soundstage. So now the idea is you’re in a movie while watching movies.
