What are your favorite shows/non-ride attractions?

Of course, this is entirely subjective. My favorites may not be yours. For me, my favorite non-ride attraction/shows are American Adventure, Country Bears, Impressions de France, Hall of Presidents, and Tiki Room. I was just there a month or so ago and didn't use fast pass plus for any shows. However, it may be needed for Fantasmic. (We didn't see it) in any case, get there early as shows can fill up.

I LOVE Hall of Presidents and Carousel of Progress.
 
I love Nemo at AK, but I hear a lot of mixed reviews.

You absolutely have to see Festival of the Lion King at AK. I'm not even a Lion King fan and I love it. Colorful and fun and very Disney.

Flights of Wonder is also cool. Seriously, my favorite part of AK is all the shows. I get FPs for Nemo and/or FOTLK, but just because I want one for the Safari and I don't do the other rides, but you don't generally need them IMO.
 
I'll chime in about the Universal shows. We enjoy the Monster Makeup show (it's special effects type stuff). Terminator is fun, although old. You might enjoy Fear Factor also. Sinbad stunt show at Islands of Adventure is also decent.

We did not like Poisidens Fury (IOA) or Shrek.
 

Mickey's Philharmagic! Our family is from Southern California so Disneyland CA is our "home base", and on our first visit to WDW in 2007 we saw Philharmagic although we had no idea what to expect when we sat down in the theater that first time. We all instantly fell in love with that show and on every (almost) annual trip to WDW it's the one show that we have to see and which makes us feel "Yes! we're back in the magic of WDW!" Ymmv.
 
#1 in my book hands-down: ILLUMINATIONS!

Is it worth a FP+? That's debatable. If you are a passholder, the answer is 'yes' at some point in time. Great viewing angle and can enjoy the parks up to the last minute and still see the show well. If you don't get a FP+ you have (2) options: camp out by the fence early and miss hanging out in the park, or just stand about 5 deep if showing up late. Even if you wait to see it at the last minute, it's still awesome! Just don't get a spot behind a tree or something obstructing the view.

At AK, I think the Nemo and Lion King Shows are worth watching. These shows are huge so I usually don't get a FP+. To me they are equivalent though of paying for local small theater shows in town that have a $40-70 per ticket charge. These shows are really well done and make you get a lot of bang for your buck on your ticket costs.

At DS, I think checking out Beauty and the Beast is also a good idea. Covered amphitheater and really well done.
 
The British Invasion show in the Great Britian section of Epcot. The Dragon Land acrobats in China. Flights of Wonder in the Animal Kingdom.

Must -dos for us:
MK:
Philharmagic - adorable, great Disney music, and no need for FP.
Celebrate the Magic - projection show on castle, so amazing, find a good spot with center view of the castle for best view.
Wishes - MK fireworks, just classic Disney - watch for Tink to fly at the start(weather permitting).

AK:
Lion King show- Broadway quality performers, acrobats, music - lot of fun
Discovery Trails - there are trails that go close up to the tree of life that aren't well marked but you can ask a CM - very cool to see all the animals carved in the tree.
Devine - this is a woman who is made-up to look like a tree covered in vines, and you can walk by her without even noticing, the camouflage is so good. You can ask a CM if she is around that day, and where you might see her. The last time she was in the Oasis early in the morning.
Safari - a ride I know, but closet I can get right now to going to Africa! Giraffes and elephants are awesome, and sometimes the male lion is up. FP or early morning or both - no two rides the same.

HS:
TSMM - I know this is a ride, but the queue is so well done and one of the few interactive rides, such a fun game, much better than Buzz in MK (IMHO) - need a FP or do early at RD.

Indiana Jones - fun stunt show
Fantasmic- great night show
Sci-Fi - again, not a ride, but a fun experience to eat in a car at a drive-in

Epcot:
Soarin - another ride, but the feeling of flying is amazing, seeing places along with smells (I assume this is still the case with the new movie)
The Seas - my fave, the manatees are here, along with dolphins and other fish exhibits.
World Showcase - performers in different countries you can watch - the show in Italy was hysterical - i think they were called some kind of sisters - DD got picked to perform along with others from the crowd, really entertaining.
 
If you do the Halloween Party, they have a great parade, presented twice per night, and which is unique to the Party.

Don't forget The American Adventure, in the American Pavillion in Epcot's World Showcase. Great animatronics show.
