Definitely do Dumbo even if the posted wait is long; the wait for that ride can be as much fun as the ride itself for little ones!
Don't forget to do Turtle Talk with Crush! There's usually not much of a wait and the wee ones love Crush. Also don't underestimate the attraction of the kids fun stops in the nations in Epcot. When mine were little, they LOVED stopping at all of these, coloring, collecting the stamps and the stickers, etc. They also loved the Junior Ranger program at AK.
