What are you making for the 4th?

I am dessert, as always. We had a BBQ today at work, but I just brought some cupcakes I whipped up last night at midnight after I got home from Transformers...lol

For tomorrow, I'm just going to keep it simple, too (no watermelon cake like last year). Lemon cupcakes, probably, with cream cheese filling and buttercream.

What about everyone else?
 
asking what recipes people have for the 4th and there are 45 posts- so there might be something good there to check out.
 
We are doing hotdogs and chili. I might "grill" them on the george foreman grill since the weather has been terrible lately. Nothing too special since we are trying to be healthy again and I'm trying to lose a little weight.
 
Gumbo and cornbread! Not very "4th of July'ish" I know, but I had a craving. I have a watermelon for desert so that should make up for my lack of patriotism!
 

Cryssi -- those cupcakes sound yummy -- I love lemon desserts. Would you share the recipe?

I made nothing. But my husband was cooking all day. He and his business partner were food vendors at a local celebration. They manned the grill cooking hot dogs all day and I worked at the booth. Very busy day -- I barely had a chance to eat.
 
the cupcakes were just eh. I used a cakecentral recipe that is a slight variation on my favorite Margie's Incredible Chocolate Cake...it's called "Margie's Incredible Lemon Cake" but I didn't really like it. It calls for less oil, and isn't really lemony like I'd prefer...of course, that could be because I didn't put the 2 oz. of Superior lemon flavor in it...:confused3 LOL

Anyway, next time, I'll just use the Margie's Incredible Chocolate Cake recipe with lemon cake and pudding...

I ended up using sleeved lemon filling instead of cheesecake. I was going to use sleeved cheesecake filling (b/c I didn't have time to whip anything up from scratch).

I think you might be disappointed with this, so I'd probably wait until I find a good, lemony recipe and I will definitely share that one! :)
