For what it's worth, I've slept on the daybeds many times at the deluxe resorts, and they are very comfortable (if you're used to a daybed at home, or a twin, it's virtually the same). It's not like a sofa bed. I've also slept on the bottom of a set of bunk beds at WL, and it was comfortable enough so long as I took care not to whack my head getting in and out of the bed.
If it were me, I would probably either get two value rooms, or a All Star Family Suite. Granted, with the Family Suite two of the people would be on pullout beds, but they have the more comfortable type there, without that annoying back bar. You have two bathrooms, to make getting ready go faster, a sitting area for when you just want to hang out, and a kitchenette for snacking. If you get two value rooms, everyone gets a regular bed and you still get the two bathrooms, but you may not have connecting or even adjoining rooms, which could get old after a while. You also wouldn't have the kitchenette for snacking.
Space wise, you could put three comfortably in any of the deluxe rooms that have three separate beds, but you lose the extra bathroom. Considering that you will be paying more for a deluxe than the family suite, I think the suite is the better choice.
Of course, it really boils down to which resort appeals to you and your friends the most, and how much time you'll be spending there.
