The second week of November is pretty quiet but I would still avoid MK on Saturday. Other than that I think the park crowds should be pretty manageable regardless of the day.
I imagine some of our veterans will have some advice for you too
We were in Disney last year from November 16-23. I know there are certain days to avoid certain parks, but that doen't seem to really matter based on the time of year we go. I'm not a big fan of crowds, and standing in long lines all day. Sure Disney is busy year round, but when went in November we didn't wait more than 15-20 minutes in line at the very busiest time of day in MK, MGM, or EPCOT. We did Blizzard Beach on day, and crowds were light there also. MK on our first day (Sat--11/16), was busy but not overwhelming especially with two small children. For the most part, the crowds were VERY light all week, except for the Sat that we left (11/23) in MK. I figured it was the start of the vacation week for those on Thanksgiving vacation. Temps were in the low 80's during the day and a bit cooler at night.
This year we picked October to go, and hopefully crowds will be light too.
