What are beef popovers??

Can someone please explain to me what beef popovers are...They are offered as an appetizer @ Yatchsman Steakhouse, and I am not sure what they are...I have an idea, but would like some professional to enlighten me...Thanks!!

how these are done too. Often popovers use beef fat in the recipe similar to yorkshire pudding which is their most likely predecessor, especially when they are being served as a side to beef. I have seen popover dough used as a casserole cover similar to biscuits on a pot pie or popovers split with a meat mixture spooned over like chicken a la king.
