Inspired by the vinegar thread. My parents left yesterday for Florida and dropped off all their leftover groceries, including a quart bottle of lemon juice. How can we use this up before WE depart for Florida in January? Any ideas?
 
I use a tablespoon to make buttermilk (which is difficult to find here). I use the buttermilk for my banana bread.

Maybe make a pitcher, or two of lemonade?
 
I'd be baking up a whole bunch of lemon stuff:

Lemon bars
Lemon sugar cookies
Lemon Bread
Lemon muffins
Lemon pies (using recipes from the Jell-O pudding sites)
Lemon Meringue pie
Lemon freezer desserts

All kinds of really great recipes out there that call for lemon juice! :goodvibes

 
I sprinkle it on my roasted asparagus. I use it to keep my apples from browning.

I put half lemon juice and half water in the mocrowave and heat to a rapid boil. The steam cleans the inside and the lemon juice makes it smell good.
 

Couple of drops in my nightly ice water if I am out of fresh lemon wedges

In hot tea with honey when we have colds or sore throats

My favorite is to sprinkle onto chicken breast, add a pinch of salt and some fresh ground pepper, let marinate all day or overnight then BBQ - YUMMY!

I also use it as a base with carne asada seasoning for a beef marinade
 
In Mexican foods as a substitute for lime. Tacos, Rice, Carne Asada, etc.
 
Put a couple drops of it in sprite with a couple of mint leaves if you have any if not just the drops of lemon juice. YUM
 
Lemon Pound Cake:

Ingredients:

For the Pound Cake:
1 c. butter, softened
3 c. sugar
6 eggs
5 T. lemon juice
1 T. grated lemon peel
2 t. lemon extract
3 c. all-purpose flour
1/2 t. baking soda
1/4 t. salt
1 1/4 c. sour cream

For the Glaze:
1/4 c. sour cream
2 T. butter, softened
2 1/2 c. powdered sugar
3 T. lemon juice
2 t. grated lemon peel
1 t. lemon extract

Directions:
For the Pound Cake:
In a large mixing bowl, cream butter, and sugar until light and fluffy -- about 5 minutes.
Add eggs, one at a time, beating well after each addition.
Stir in lemon juice, peel and extract
In a separate bowl, combine the flour, baking soda, and salt
Add flour mixture to the butter mixture, alternating with the sour cream. Beat just until combined.
Pour into 2 greased and floured 9-in. loaf pans.
Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely

For the Glaze:
In a small mixing bowl, beat the sour cream & butter until blended
Gradually add powdered sugar
Beat in lemon juice and peel
Drizzle over the cake
Enjoy!
