What’s for Dinner Tonight?

asparagus and salmon. easy and healthy Dinner tonight was simple but honestly really good. Sometimes basic homemade food tastes better than fancy restaurant meals. I’ve also been reading way too many food delivery reviews lately and noticed people either absolutely love or completely hate those services. Seems there’s no middle ground anymore. Cooking at home still feels more relaxing to me most of the time. Hope everyone had something tasty tonight.

I had to learn to cook all over again after having DD, SIL, and the Little Guy here for 3+ years. Not only do SIL and LG eat like there's no tomorrow, but DH and I eat less and less, now that we are getting older, so it was a really big adjustment!

Oh yeah, dinner tonight. There's quite a bit of leftover rotisserie chicken, so I'm thinking maybe we'll have chicken enchiladas.
I'm impressed that you adapted as quickly as you did. DS moved out years ago & I still only get it right, when I'm cooking for all three of us.
 

Fruit salad...all of this for $3.00...border culture very finicky about freshness.... this is left over from yesterday afternoon cart 🛒 🛒 🛒 🛒 push out... lucky this morning... about $40.00 of fruit

All staff day (they bring everyone in 1 day a month) and it’s always chaotic but today was extra crazy for me because I did an hour gardening session followed by a plant swap. They always try to do something ‘fun’ on all staff days. Everything went smoothly and there was a lot a chat about the plant swap so maybe we’ll do it again next year.

Stopped for Moe’s on my way home, I got a veggie burrito.
 
On Saturday we had a Bowling party for my husband's 50th Birthday. It was really fun! Our local Bowling Alley has a private room with 8 lanes. Afterwards we went to a great local German Restaurant. I had a side of the potato pancakes with chunky applesauce and then a dish called Schweinebraten. It is a roast Pork with this really great sauce. and red cabbage and spaetzle. I had German Cheesecake and hubby had Black Forrest cake for dessert.

I worked the weekend and then last night just night shift. Tonight I went to see my SIL and BIL's brand new house (they had a house fire a couple years ago and they just had this house built) and afterwards my SIL and MIL and I went out to a local Mexican place. I had shrimp enchiladas they were really good. I brought home a meal for my hubby - Enchilada supreme, it's 4 enchiladas, one beef, one cheese, one chicken and one bean. This place has the BEST enchilada sauce, better than any other place I have had, I could eat a big bowl of this stuff like soup
