What’s for Dinner Tonight?

Second batch of ginger cookie dough (1/2 recipe) for the freezer.
Divided the half into quarters so that some can go to my sister’s Thanksgiving celebration and the remainder is for Christmas.

Had a bowl of Lipton’s chicky noodle soup with extra parsley, broccoli and peas added. Old fashioned yum.
 
After a very stressful visit at the hospital with dad we took my mom out to to dinner. Tomorrow night is comfort food....pot roast in the crock pot over mashed potatoes. We are at the point about talking about moving in again. It's a lot. So it's nice to just focus on the menus for now.
 
Tonight is tacos ... ground beef with the Old El Paso seasoning mix for the meat eaters, black bean for the vegetarians, and assorted chopped lettuce, tomatoes, olives, cheese, sour cream, avocado, corn, and both soft and crunchy shells.

Wednesday is usually our takeout night, but we've been trying to scale back on that a little and make sure we're not wasting food by having too many leftovers that we eventually have to toss, and by using our produce up before it goes bad!
 
Fish and chips tonight. Finished up an open bag of fries in the freezer. I feel like I’m starting to make room in the freezer.
 
Did a bit of experimentation today.
Using the leeks I bought at the farmers’ market yesterday I made a few variations on leeks vinaigrette with main difference being that some portions were frozen after being dressed while others were frozen w/o the dressing. I’ll see how it turns out in two weeks time; pray those leeks didn’t die in vain😁.

Ate some of the leeks vinaigrette combined with mushrooms for dinner.
Finished off the leftover Lipton’s soup with it.

Boneless/skinless chicken was a steal today, so I got some and made my mom's chicken and rice for the fam. Our stove is still out - so into the crockpot it went. I will serve salad or steamed broccoli with it. Comfort food after a long few weeks around here.
