What’s for Dinner Tonight?

Tonight I pulled out from the freezer some Argentinian red shrimp with ginger, garlic butter and togarashi style seasoning from Trader Joe’s. I made linguine, added a little extra butter, pasta water, and parm cheese and finished cooking the linguine in the shrimp pan with the ‘sauce’. It was surprisingly good and had a little kick.
 


@LovesDaisy @NYCgrrl I love Stew Leonards too! We don't have any here in Maine, but DD used to live in Connecticut; we'd go to Stew's every time I went to visit!

I made chicken noodle soup w/carrots, celery, and onion for dinner tonight. I made the stock about a month ago as my freezer was getting to full of "garbage" (roast chicken bones and veggie scraps) so it went together quickly. I picked up a chicken breast that was on clearance at the small market up the street so we'd have freshly-simmered meat for the soup, and heated up some leftover angel hair pasta instead of noodles. Big pot 'o soup, noodles and chicken optional, a loaf of sourdough, and salad rounded out the meal.
 
Brined a couple of thick pork chops last night using star anise as the prominent seasoning. So tonight it’s smothered pork chops, grits, and tangled ribbons of steamed Swiss chard, mustard greens, radish tops and spinach on the side. No rhyme or reason to the veggie; just seemed they would work together and boy did they ever. I hope I remember to make this another time.
 
Tonight was Swedish meatballs over egg noodles with a green salad. I’m not even making a dent in the freezer. :sad2:
Come colder weather you’ll be so happy for the fullness and sad to see your stocks recede. We’re just never happy, are we? 😉👍🏾
 
Once again, I've got a lot of catching up to do. My sisters visited us last week. The county they live in was devastated by Helene, so they're still there. When they finally got to speak to their families, they all told them not to come home. Alas, we had to hit the road again & leave them behind. At least, they have hot food, electricity & running water, which they wouldn't have at home. I'll try to come back later to post what we had last week, but this week, we've had:

Sunday -Burgers & fries w/ my sisters. DH & I shared a burger & added a burrata salad.
Monday - We shared a steak sandwich. DH had fries. I got a side of potato salad.
Last night - We had calamari & clam chowder.

DH is sick & trying to work, so we've been getting takeout. Tonight, is yet to be determined. Hopefully, he'll feel up to going out.
 
Somehow got it into my head that I had to go to Stew Leonard’s this morning and so I did. Had no idea what the procedure was for getting on a Metro North train and somewhat peeved the conductor but he was on the money when I got off in Yonkers so all was well.

Many changes since I was last there but still decent prices on the goods I wanted. Tried to focus my buying but somehow apple cider donuts and veal scaloppine fell into my cart-wonder who put them there? 🤷🏽‍♀️

My home attendant has apparently fallen under my spell so she bought a turkey for the holiday season.😆 She left it in my fridge overnight and we’ll spatchcock it tomorrow and then she can freeze it for later use and take it home.

You have no idea how normal this felt going to the supermarket; just enjoy what you’ve got when you have it.

I bought a ground chicken Parm meatloaf in the prepared food aisle and that became dinner with carrots and string beans. A portion of a store bought fruit salad became dessert. Read an article in today’s Times that reminded me to eat more fruit so trying.
If I was able, I'd volunteer to be your attendant, just for the cooking tips.
I love Stew Leonard’s! I mix up my grocery shopping locations and go about once a month. The apple cider donuts usually fall in my cart this time of year too! I might have to put it in the list for next weekend!
I've never seen a Stew Leonard's. If I did, I probably wouldn't have connected the name with a grocery store. Now, I'm intrigued. I'm going to look for one, while we're up north.

Removed the hard stem from the Swiss chard, mustard greens and spinach. Lay the leaves of all top of each other and rolled them together like a cigar; slice thru the “cigar” about 1/4” apart till finished- it’ll look like thin ribbons.
Place steamer, filled with greens, in simmering liquid ( could be broth, water, or whatever you fancy), cover and cook for about 3-5 minutes or until the greens darken. Serve immed and if you like, sprinkle with lemon juice.
I don’t use salt on most of my veggies but that a personal weirdness, lol. Season as you like 😎.

Finished eating the braised pork chop leftovers today. Still tasty.

I made several soups last month and now awaiting the arrival of a new long lasting cooler that will let me bring make ahead dishes on our December vacation. When it arrives I’ll pick and choose what will fit into the overall menu.

Err..elder sister announced me “overly haunted” which is a Caribbeanism that means obsessed but I beg to disagree 😉. I’ve time on my hands and using it as best as I know. Now back to reading cookbooks, hahaha
 
I attempted to get back on track with meal planning this week but we attended a wake tonight so we ended up stopping for dinner after. I had pesto pasta, it was a ridiculously large portion.
 
Tonight we had potato/cheese pierogies, frozen from Sam's. I threw together a veggie fry of a little diced bacon, a sliced onion, three diced apples, and 1/2 head of Napa cabbage, seasoned with S&P, smoked paprika, and garlic. After browning all this I threw in a little cider and let it all simmer. I also made a brown apple gravy from cider and a packet of brown gravy mix. It was all just thrown together, based on what was in the cupboard/fridge, but man, was it good! DD and SIL mixed sour cream in the apple gravy and it was even better!
 
No idea,,,,just got home from vacation last night.
I need to go to the grocery store.....something else for sure
We just got back a few days ago and had to hit the ground running at work. Tonight is the first night I've cooked; a very quick chicken recipe I ripped off of Tony Roma's many years ago, with rice pilaf (from a mix) and frozen peas for sides.

I had suspended our meal subscription service while we were away but we should get a delivery tomorrow, so there will be a few things to choose from for tomorrow night.
 
There are only a few locations in CT, NY, and NJ. If you do go let us know and we can make some recommendations. ☺️
We'll definitely stop, if we see one. Just in case we happen upon one, what would be the recommendations for two people "on the road" with a microwave (at most) to cook in?
