We've done 7 DCL cruises. On our first NCL cruise now and it's beyond horrible!

OP, your post reminded me a lot of our experience sailing in Alaska with Princess. Ultimately Disney cruise line prioritizes families and customer service, and those are the two most important things for us at the moment. May feel differently when kids are grown.
 
We're Platinum on DCL, but have done a couple of cruises on NCL. We enjoyed them, and I l liked the "Freestyle" approach where your schedule is not as rigid as on DCL. Service, particularly when it came to the room steward and MDRs was certainly not up to DCL's standards however. I've heard the room stewards on NCL are responsible for over 30 rooms. Pretty crazy. I think it's a good line for large groups, especially since they usually include the drink package. We have also sailed RCCL and Carnival. If I were putting together what I felt was the perfect cruise line, I would actually take elements from each all of them.
 
We did 12 DCL cruises. Loved our 1st NCL. What I hated about NCL is that when we canceled during covid they only refunded 90% of our money (and our cruise next certificates) for the cruise we booked after the 1st one. Took us 8 months to get the last $250 back. Can't wait to do another NCL - I enjoyed the "adult" activities and things being available to do after 10pm. Disney is great, we are going again - but it is always the same old same old thing - nothing new. NCL had a lot more to offer for adult activities for me.
