WDW resort food court after EMH

If you go to a resort food court after evening EMH can you still get good QS options? Which one would be the best option (we will have a car)?
For example HS closes at 11pm and the Caribbean Beach food court is listed as open until midnight, but it is unclear what food options would still be available.

May be I'm wrong, but from my experience the food court selection at this time was limited to snacks (plus some sandwiches and salads) and drinks (many stands were closed at this time). [FONT=Verdana, Arial, Helvetica, sans-serif]Full dinners are available only till 10 p.m. Room service is available till 11:30 p.m.[/FONT]
