Waitlisting at 7 months IF 3 days of 11 night trip are not available????

We typically don't book an 11 night trip, but this particular October, it seems like DH can get off 8 work days, and we are interested in booking a 11 night trip. My question is, if at 7 months, the first 5 nights are available, then the next 3 are unavailable, then the last 3 nights are available can I waitlist the 3 that are not available OR do I book the first 5 nights then wait till 7 months before the next 3 that are unavailable and waitlist then, and hope that the last 3 are still available at that time?
Don't do a longer trip often, have only waitlisted once or twice, so I am confused.:confused::eek:
Also, I do know that If a waitlist is found, they match it immediately and take the points, which is fine.
Question is though, IF we decide that we want to book somewhere else AFTER the waitlist is matched, and say hypothetically that we have secured all 11 nights, this is not a FINAL transaction, like banking or borrowing? We would be free to cancel or change this reservation if it were outside the 31 days correct like any other reservation, correct?:scratchin
We are thinking of staying for the first time at Bay Lake Tower. We pretty much have stayed everywhere else except Old Key West, Copper Creek Villas, and Bay Lake Tower.

Assuming you book the first 5 nights, you'll then have to wait to waitlist the missing nights until the window opens for the first missing night, and then wait again for the window to open for the last three nights.
