We will have one day in Orlando with time to head to WDW for just a bit. Can we go to a hotel food court (probably Port Orleans) if we aren’t staying at a resort or going to a park? If so, do we just tell the security person that’s what we are doing?

You can go into any resort on property and eat, yes. No explanation needed.

For Port Orleans, you should be good. Sometimes if it is busy unless you have an ADR they won’t let you park but this is normally for the Deluxe resort close to Epcot or MK.
