Very first night of Mardi Gra at USF?

I unknowingly scheduled our day at Universal on the first day of Mardi Gras, Friday 2/21. Should we reschedule to a different day? Are there other events besides the food vendors and Parade? Does anyone know or have an opinion?

Well since no official information is out, no one knows what's planned for that day. There should be a concert, the parade, and vendors when you go.

I would say to keep your schedule the way that you have it. The parade is awesome. They set up additional food stands and are selling cajion food and they have the mardi gras floats with beads and coins that they are throwing to the crowds. After the parade they will go into a concert. If you go on a Sat night they will have a know name band preforming.
