I know there is a ton of stuff to do in Vero, but how early do I need to book activites? I am thinking about the child stuff- The crafts- They are 4. I don't want to get there and not be able to do anything. Also my husband would like to go Fishing any suggestions? And the boat ride where you can see Manatees? Anyone know anything about that?

Lots of great questions.... As far as the daily activities, there are only a few specialized activities, mainly for older kids or adults, that would have any cutoff time. I am sure if you showed up at a young kid's activity a bit late, you would be welcomed and have a happy time.
The CM's a VB are perfect. I've seen them interact wonderfully with 2 year olds to 10 year olds without any help from mom or dad. VB is special in this respect.
I think VB and HHI management understand that they don't have WDW next door and the kids need extra attention. It is much like the Disney cruises... they pay extra special attention and have the programs to keep the kids interested, exporing, and happy.
As far as fishing... I am not a fisherman (of fish), but just north, at the Sebastian Inlet, people flock to try and capture many special fish that can only be found at an ocean inlet. Some ocean fish, some river fish. It is obviously a wonderful place to fish.
I do see on occasion, people fishing the ocean at VB... I just ask that when you see someone like me heading out into the waves (like around 9 am) reel in your lure... and call it a day.
I have also heard of some people catching and releasing at the pond/lake Disney has accross the street.
