My family is vegetarian and as much as I have reviewed the menus on the website, I am finding few options, other than pizza, mac n cheese, for evening dining. Has anyone had a favorable experience with special meals?

Every table service restaurant offers at least one vegetarian option. Many restaurants have other selections that can be easily modified to be vegetarian. Nearly every table service restaurant has a vegetarian appetizer, many have several. We have had very nice meals made up of several appetizers. Just a few recommendations:

Boardwalk -- Spoodles
AK -- Tusker House
AKL -- Boma
Cape May, Chef Mickey's, Crystal Palace, 1900 Park Fare -- all buffet locations have a good vegetarian selection and the chef will explain any "hidden" non-vegetarian ingredients. They nearly always have one soup that is truly vegetarian too.

Counter service locations are more limited and a few are just about hopeless. However there are many with lots of options other than pizza and mac and cheese. Here are a few:

MK - Cosmic Ray's -- veggie wrap, vegetarian burger
MK - Columbia Harbor House -- veggie sandwich, veggie chili
Epcot -- Electric Umbrella -- veggie wrap
Epcot -- Sunshine seasons -- numerous options -- salads, veggie cuban sandwich, lo mein, fried rice, sometimes tofu, sometimes veggie soups.
Epcot -- Tangerine Cafe -- hummus, tabouleh, lentil salad, falafel, etc.
DHS -- Backlot Express -- veggie sandwich
DHS -- Pizza planet -- ceasar salad, caprese salad
AK -- Unfortunaley options here really are limited -- Pizzafari -- pizza, ceasar salad
Boardwalk Bakery -- veggie panini

I definantly agree with ROEDISNEY you should check out The Wave at the Contemporary. My girlfriend is a vegetarian whose very picky and she loved the place. There is also the California Grill at the contemporary if you're looking for upscale dining. Besides the awesome view they have great soups and pastas.
 
Are you looking specifically for a very special meal (which usually means a resort restaurant) or a tasty table service meal at the parks?

Apparently the resorts have the best dinners--DH and I never take the time out from the parks to check out the resort restaurants, though. We eat virtually every dinner in the parks and my favorite vegetarian meals have been at the Rose and Crown, Chefs de France, the Mexican restaurant (I forget the name) in Epcot, the Rainforest Cafe in the Animal Kingdom, and Mama Melrose in the Disney Studios.

I would describe the food in the parks as "pretty good" rather than "special" though. :)
 
These are my favorites, although they don't necessarily have a lot of veggie choices - in some cases the one option they do have I just really, really like.

San Angel Inn (Mexico - Epcot) - request the vegetarian menu (it's not on the normal menu) - the atmosphere is lovely and the food yummy.

Teppan Edo (Japan - Epcot) - it's just normal hibachi vegetables, but again, a fun atmosphere. They're really good about cooking the vegetables for the vegetarians first before cooking any meat on the grill as well.

Boma (Animal Kingdom Lodge) - it's a buffet with many vegetarian choices, and the servers and chefs will be happy to point out which options are vegetarian and which ones aren't. The hotel is really neat to look around as well.

Brown Derby (Disney Hollywood Studios) - they have a noodle bowl with wok-fried coconut tofu that is delicious. I'm not really a coconut fan, but I love this dish. (I have them leave out the mushrooms, because I'm also not a mushroom fan.)

As others have said though, you can go to any of the Disney-owned table service restaurants and they will have at least one vegetarian option even if it's not listed on the menu.

My absolute favorite counter service is El Pirata Y El Perico - vegetarian tacos! Nothing fancy, but taste so good. Unfortunately it's only open for lunch, and only at the busiest times of year.
