Vegetarian Chili Recipes?

I'm looking for a great vegetarian chili recipe. Anyone? Crockpot recipe or not, doesn't matter. Thanks!
 
I use my old recipe and the morningstar farms crumbled fake meat. My chili had lots of onions, lotsa garlic-lots!, equal measures of cumin and chili powder, dark and light kidney beans, three large cans of whole peeled tomatoes that we rough chop, lite sour cream and shredded cheddar as toppers. We make it in a very large, stainless skillet-the biggest Revereware made 30 years ago.
 
I only like vegetarian chili so this is the recipe I usually make.

1 tbsp. canola oil
2 cups chopped onion
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
1-2 cloves minced garlic
1 tbsp. brown sugar
1 1/2 tbsp. chili powder
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
2 16 oz. cans stewed tomatoes (not drained)
2 15 oz. cans black beans (rinsed & drained)
1 15 oz. can kidney beans (rinsed & drained)
1 15 oz. can pinto beans (rinsed & drained)

Heat oil in large pot over medium-high. Add onion, bell peppers, & garlic and saute until veggies are tender (5 -10 minutes). Add sugar and remaining ingredients and then bring to a boil. Reduce heat and simmer for 30 minutes -stirring occasionally.

It makes around 8 cups - so you will have leftovers. I usually serve it with shredded cheddar cheese and sour cream as toppings.
 

For a quick and easy one, I use the McCormick's chili seasoning packet. I add two cans of tomato sauce and all the veggies I like such as carrots, onions, celery, beans, chopped asparagus. Ready in a half hour and tastes great...even better the second day.

Hardly any calories too!
 
In the crock pot:
1 can of red kidney or pinto beans
1 can of white cannellini beans
1 can of black beans
1 can of diced tomatoes
1 clove of garlic sliced
1/2 onion
1/2 green pepper
1/2 red pepper
some salsa
chili powder
celery salt
pepper
hot sauce
cook on low for several hours
top with sour cream and shredded cheese

Sometimes I add some beer

Sometimes I add some spicy V-8 juice, canned pumpkin (about 1/4 cup), brown sugar (1/4 cup), cinnamom and nutmeg-very good!
 
This recipe was featured on Good Morning America yesterday and I made it today and it's really yummy!! It's Vegan Sweet Potato Chili. It's got a kick, so if you have kids you may want to use less of the seasonings.

Ingredients

2 sweet potatoes, peeled and diced in 2-inch chunks
1 yellow onion, diced
1 red bell pepper, seeded and chopped
1 (14.5-ounce) can tomatoes (whatever's on sale—mine had oregano and roasted garlic)
1 (15-ounce) can red kidney beans, drained and rinsed
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon smoked paprika
1 teaspoon chipotle chile powder
1/2 teaspoon kosher salt
1/2 cup orange juice
1 cup water


Cooking Directions

Use a 6-quart slow cooker. Put the sweet potato into the pot. Add the diced onion. Follow with the red bell pepper, tomatoes, beans, garlic, and seasonings. Pour in OJ and water. Cover and cook on low for 6 to 8 hours, or until the onion is translucent and the sweet potato is fork-tender. (If you want the sweet potato to get really squishy and disappear when stirred, cook longer.)
 
I always add a sweet potato to my chili. I usually cook my chili in the crock pot. Sometimes I peel and chop the sweet potato and add it raw, or microwave the potato till done allow to cool, slip off the skin and add to the chili. Makes a great sauce either way.
 
I start with Rachael Ray's Veg Head Chili recipe (foodnetwork), and doctor it up. I only use recipes as guides...

I add way more of the peppers (red, green, yellow and orange bell peppers), onion and garlic, the whole beer, the whole can of refried beans, extra black beans, "roasted" diced tomatoes etc., mom's home canned tomatoes. Also, I add a couple tablespoons of unsweetened cocoa powder, which really makes the flavor rich, extra cumin & chili sauce. I simmer mine for much longer than recommended.

A thing to watch is the recommended amounts of jalepeno & hot sauce.

It's great with a little fresh guacamole.

My husband was just requesting this yesterday.
 
Gosh, I feel bad that I don't have exact measurements. I just do it to taste, I think chili is best that way-always tasting from the spoon.
