Vacation Dinner Ideas Needed!

I just booked our second summer vacation - a condo at the beach. We just returned from DW so this has to be our "budget" trip. I'm sure we will eat out a couple of nights, and probably order pizza one night, but in between I would like to cook some quick and easy dinners to keep the expense down.

I already have spaghetti on my list. Grilling is out - it's not allowed on the balcony and although the complex has grills in the public areas I doubt we would go thru the trouble of using them.

Any ideas?
 
I always go with super easy on vacation - like canned chili over microwaved baked potatoes or prepared food like "Chicken Viola" you just heat and bagged salad. I'll be eager to see what people have to say.
 

my easy to make fav is

Kelbasi or smoked sausage
potatoes
onions
green/red/yellow peppers (whichever you can get cheaply our aldis sells three colors for 1.29)
margarine or butter.

Cut kelbasi in two inch long pieces, wash and cut up potatoes (peel them if the kiddos hate the skin, but not necessary) slice up onions, and peppers. Layer them in a casserole, top with gobs of margarine or butter approx 1 stick, salt and pepper to taste. Cover and bake at 375 for about an hour or until potatoes are cooked. Stir before serving to get the butter all over everything. You can substitute italian sausage for the kelbasi but make sure it is cooked through before serving.

I love this because you throw it together in less than 10 minutes and then you can head back to the pool or take a shower and get ready for an night at the putt putt course....:) Just be sure your condo has a casserole dish it will fit in or buy a foil pan from the grocer or dollar store.


We also like taco salad.....

1-of ground meat browned and cooked with taco seasoning.
1 head of iceberg chopped or 1 bag of lettuce
tomatoes chopped
onion chopped optional
black olives chopped optional
cheddar cheese shredded
1 bag of doritos regular flavor crumbled
italian dressing

place all ingredients in a large bowl, add italian dressing a little at a time tossing in between until well covered.

Double this if you have big eaters, I usually do as my guys love it! Oh and leaving out the onions and olives is not a problem, my kiddos hate them both:) I recommend making the meat at home, freezing it and bringing it in a cooler it would be cheaper then paying resort area prices for meat.

Taco salad is my church pot luck favorite, everyone always asks if I am bringing it....just toss it right before you eat it

I've collected these ideas from these boards and at other forums:


taco salad - salad, premade taco meat, cheese

packaged pasta dishes or frozen dinners like lasagna- plus bread and salad

soup and sandwiches (ie ham and cheese) and chips or veggie snacks

spaghetti - sauce, frozen meatballs, garlic bread, salad

rotisserie chicken, quick noodles and sauce, frozen veggies, rolls

Are you interested in cooking ahead and freezing? If so how about quiche?DSIL always make several to bring along on vacation and they are so handy... you can literally eat them for ANY meal! ...............P
