us currency in shore excursions

Previous cruisers, please Help!

What kind of currency is used for shore excursions. We'll be on Eastern 10/18. Cash? US traveler's checks? Recommended beach on St. thomas or St. Marteen for children ages 3 & 5? Thank you all.

Just so you know- when we were in Grand Cayman my dh paid for a drink with a $20 and he got back local bills in change. Not a big deal, but nice to know in advance!
