I might have just the thing for you, its egg, sausage and cheese casserole that is made the night before and baked the next day, PM me and I will find the recipe and send it to you to look at. I make it to take to work on christmas morning for the coworkers that have to work that day, they love it, I can't tell you if its good, I don't eat like eggs, cheese or even sausage to be honest with you.

that sounds good- can u share the recipe please

I make a breakfast casserole every christmas morning. I usually make it that morning, but you can make it the night before and heat it...it will just take longer to heat up.

Mine is a layer of shredded hashbrowns, then cheddar cheese soup, then bacon/sausage, then scrambled eggs, then shredded cheese and more bacon/sausage.

You cook everything (except the soup) before layering it, so when you heat it up right after, it only takes about 10 min or so just to get the cheese to melt. If doing it the next day, you'll have to heat it for longer to warm through.

24 hr Omlet casserole

9x13 pan

7 slices white bread
3/4lb longhorn cheese(any kind)
8 eggs
3/4tsp salt
1tsp worcestershire sauce
2 1/2 cups milk
sausage cut up or ham or bacon
mushrooms/onions/slivered almonds (optional)

Trim crusts from bread slices, butter bread on one side
cut into 1 inch squares
place bread butterside up in greased 9x13 pan
Beat together eggs, milk and salt
pour over bread in pan
add sausage, ham cubes or bacon and optional items
top with grated cheese
cover with foil and refridgerate
bake covered in a preheated oven at 325 for 1 1/2hrs
uncover for last 10 min to brown
turn on low to keep warm up to serving time

I make this in a deeper baking dish or cake pan
I add all 3 meats and onions (it does taste good with mushrooms, but I don't care for them)
I have made it with hashbrowns in it also, didn't turn out so well

I just make it the evening of the 23rd and take it out christmas morning and put it in the oven

Bob Evans Breakfast Casserole! The best I have ever eaten. Lots of sausage'y goodness. My DD asks to have this for dinner even and it is so easy to make I say yes to it.
