I remember a couple of months ago when Pete said he was going to start a monthly Universal show on the Dis Unplugged I was ecstatic, as there just isn't much out there for anything non Disney. Thanks to a thread in the Dis Unplugged forum, I was led to the WDWFanboys podcast, and this week they have a special episode with Jim Hill on Universal (and Disney's response). Well worth going out of your way to check out.

I also think people should check out iTunes for Inside The Magic, which has done two fantastic shows dedicated solely to Universal (and their normal Disney-centric shows are A+ to boot) and the recent Mugglecast, which gives the WWoHP experience from a Harry Potter enthusiast rather than a theme park goer.
