This will be our first trip to US/IOA on 12/15- 12/16. My husband and I will be traveling with our 3 kids 15, 12 and 3. Please let me know what are must see's for us and will we be able to see everything in 2 days? Will it be incredibly crowded?

crowd calendar shows those days as moderate, you should be fine. we were there last year over xmas week and that was nuts. based on the low rate for express pass, that also indicates a decent crowd day. two days should be more than enough. in terms of must sees, that really depends on your own interests.
 
I would suggest checking out the Universal Studios website and reading through the list of attractions. It's a pretty good site just make sure that you aren't accidently on the Universal Studios Hollywood site. Yes, I did that once in the beginning...

Best attractions IMO are the Mummy's Revenge, Despicable Me, Spiderman, Forbidden Journey and the Jurassic Park River Adventure but it depends on what everyone personally likes and has the courage to enjoy. Try not to miss Spiderman and Despicable Me whatever you do. Your little one will likely love the Dr Seuss area and Curious George. There is a little train ride that goes above Seuss Landing. It might be easy to overlook but it's adorable particularly for a small child. It is a slow loader. There are also quite a few meet and greets in different areas.
 
as suggested by planogirl, do check out www.universalorlando.com and get a description of the rides and shows in each park.

you can use the child swap for all the rides.

take advantage of that system.

your dates reflect saturday and sunday.
saturday, depending on weather can bring in local crowds.

if you are staying onsite, not a problem on line waits.
if staying offsite, be there at the entrance gate a good 30 minutes prior to opening.

if parry hotter is your goal, head there first and do it all until it becomes too crowded for you.

Thanks for all your help! We are staying off property so I will be sure to be there early enough. We want to see everything!! I just hope we have enough time.
