Universal / IOA with Great Grandma!

Ok, in about 10 days taking DD (31) DGS (6) and DM (84) to WDW & Universal/IOA, all prepared to travel with small child and grandma, one stroller and one scooter.... me & DD walking LOL- We have done this before so I would say we are pretty prepared- I know WDW very well, so we know what rides my Mom will be able to ride safely, but Universal/IOA are a little diff. Up until this year my GS was only able to do a certain number of rides, although this year he will still not be tall enough for HULK or DR. Doom (TG) but he will be able to get on HP FJ and other rides in that land that I am not familar with, so I can't make an informed decision on if my Mom would safetly be able to ride. She has done ET, and Spiderman in the past, she would never do Dudly doright falls, or popyees, Tell me what rides I should make her avoid?!?
