Universal Help Please.

Hello everyone.
having missed my solo Disney trip, and now wanting to do something fun with the kids, I am looking at a Universal trip (the kids are a bit older, and the universal IPs are more of a pull to them)
DH has blood cancer, and also had radiotherapy for mouth cancer last year. He is HOPING to get his PEG tube out soon, and be able to make the trip from UK with us in late October.
Universal should work better with it being much easier to walk around (We are looking at Royal Pacific)
We are looking at club level to help with the food requirements and such.
BUT I am wondering whether anyone has experience of travelling to universal or Disney (we plan to do a little hop to WL and the halloween party if there is one) with restricted ability to eat?
DH is on an "easy chew" diet ( IIDS level 7 - ish, more like 6.5 tbh) and one of the biggest obstacles is finding enough food that he can eat to make it possible for him to maintain his weight while he is away, doing more exercise than usual. And also so he can still eat things he LIKES and not be jealous of us eating whatever we want!
Any advice please (for extra assistance this diet is about texture, and means no rice, no pasta, no crispy things, no nuts, no shelled veggies, like peas etc and LOTS of sauce - he cannot make saliva properly, and cannot swallow efficiently)
