Is it possible and does it makes sense to Uber or Lyft from Shades of Green to the parks? Looks like the monorail will not be available to walk to Poly from the resort.

I've used Uber/Lyft from Shades of Green to the parks (and other places like the grocery store) multiple times over several trips with no problem. In 2016 I had to meet the car at the bottom of the SOG drive, but during our 2017 and 2019 trips (didn't go in 2018) the driver could come all the way up to the entry of the hotel (when returning to the hotel in a rideshare, the guard would check our hotel ID). While we do like the set schedule of the SOG buses, an Uber/Lyft makes for a very convenient trip at our own timings. Just remember with MK they can't take you to the park, and would take you to the TTC.

Thank you for the info!!

I read that its quicker to get dropped off at the Contemporary and walk to Magic Kingdom. Does anyone know if this is possible during COVID times?

Yes it is. You could also walk to the GF and then monorail to the MK.

Even though the Poly monorail station is closed, you can still walk to the monorail. Takes about 10 more minutes to walk to the TTC, or the Grand Floridian (which is what I would recommend. It's such a pretty stroll from the Poly to the Grand, along the water.)

And the walkway between the Grand and the park should be open soon, so you could walk all the way to the park in about 30 minutes.
