two day touring plan in April

Hello... we are planning on going to Universal in April for two days and most likely stay off site. we do plan on getting the park to park pass for both days. it will be my husband and i, and our 18 year old daughter. So that being said, we can miss the kid rides.... We will also go in the park that does not have early entry for their guests too. Soooo is there someone willing to tell me what they would do for those two days?? Where they would eat?? Shows??? I know, I know, peoples taste are different.. but I need a jumping off point. Nobodys way is better than the other but I just need a rough idea what to do! Thank you for your help!
