Trying to plan an early 2015 trip...

We're planning a trip for the February 23-March 2, 2015. I have a rough idea of what we want to do on certain days, but am wondering when, typically, those dates open to book rooms, packages, etc. When do they post the hours for each park? I know it was late this year, but don't know when it normally happens?
