Am I better off with Room Only or the S/P/D? OR does it depend on resort I select? We definitely need the Disney passes and food plan.

It depends on the resort you select. If it's a $400 room and you get 30% off, that's $120 off. Worth more than the difference between an adult and child dining plan & ticket. If you book a $150 resort with 15% off, that's only about $22.50 off.
