Okay, so I think I figured out that on 7/2 we will take a taxi from ASMusic to our new hotel Saratoga Springs @ 6:00am to have enough time to check in and pay for our dining plan and then take another taxi from SSR to the POLY for our 7:30 character breakfast.

Now, I need help with getting from:

POLY to MK?
SS to AK?
SS to MGM for 8:05am ADR?
SS to Epcot?

Any help for a first timer is greatly appreciated

I stayed at SSR in March. It is a beautiful resort, but very, very big. You can use Disney transportation from SSR to any of the parks. But, you will need to allow ample time. With the early ADR's, I would get a taxi, or you may be late.
The buses make an internal loop within SSR. I wish I could tell you the order, but it seemed like every bus took a different one. We stayed in the Carousel section, which is the newest, but the furthest out. We picked the bus up at The Paddock stop, then stopped at Congress Park and then the Springs. Sometimes the bus went back to The Paddock before we were on our way.
The buses run about every 20 minutes.
We don't do "commando" parks. Since we tend to take our time, we don't mind waiting for the buses. For future stays at SSR, I would consider renting a car. You may spend as much on taxi fares, as you would renting a car.

Every resort has buses that run very early to bring people to early ADRs at the parks. Check with SSR's guest services, and if this isn't the case then sure, you can get a taxi that morning when you check-in.

From Poly to MK, you have 2 choices, the monorail (faster) or a boat (slower).

From SSR to each of the 4 theme parks, you can take Disney Transport buses. SSR's only mode of transport is buses, except for getting to Downtown Disney. There is a boat going from SSR to DTD, but you can also walk it if you feel up to it.
