Is that total per person, or is per person per day (3, 4, or 7 days)?

so on the 4 day cruise, 3 people in our stateroom, we would tip the stateroom host $43.50 total (or more if he totally rocks)??

That's right so total tips for your family for the 4 days will be

$131.25 if you follow the dcl guidelines.
