Tickets: which ones do I buy???

The more I look at the ticket options, the more anxiety I get. Originally I wanted to purchase a 6 day ticket - no hopper or other stuff attached. I would be purchasing two adult tickets only as my kids are not three yet. We will physically be in Orlando for six days.

Our plans are to go to one park a day (with an afternoon break at our off-site pad). But I'm thinking....what if we just need a change and want to do Epcot at night? What if the kids HATE Epcot? (we love Epcot).

What are the extra magic hours? I know the parks open an hour early for resort guests on certain days - nice - but I'm not a morning person. Do the extra magic hours extend to the evening too?

Then I see the no expiration option.....very attractive but our family plans ("plans" is used loosely....with two toddlers there is no such thing as a plan!)are to vacation in different parts of the country each year and not necessarily return to Disney any time soon after our upcoming mid-May trip.

Is there anyone like me -- but when you got to Disney and thought "why didn't I buy park hopper w/no expiration??"
 
I personally don't buy tickets with no expiration unless I have another trip planned soon. I know it would save money in the long run, but I don't necessarily have the money to shell out upfront. I also don't pay for the park hopping feature, but that's because I never (with one exception) hop. I'd rather leisurely spend my time in the parks rather than rushing to get this one done so I can run to the other. But that's just me. Only you know your family. As far as the "why didn't I buy park hopper w/no expiration??" thing, I believe you can add on the no expiration feature later if you decide you're not going to use all your park days. Same thing with park hopping - I believe you can add it on later. Hopefully someone else can give you a more definite answer.
