I have one day left on an old park hopper ticket. (Regular park hopper not a park hopper plus) Can I use that towards the purchase of a new Magic Your Way park hopper ticket?

Yes you may.

But you must purchase non-expiration on the new MYW ticket, and if you actually did any park hopping with the old ticket, you must purchase the hopping option with the new ticket. Vacations of 8, 9, and 10 days are better done with one expiring ticket that spans the whole vacation.

Only one old ticket may contribute to the purchase of one new ticket.
