I think I know the answer to this question, but just wanted to validate. We are flying in from the east coast. Is a 5 day ticket really the maximum number of days available? If so, and I want to have 7 Park days, will I need to buy a five day and a 2 day ticket? I am assuming so...
 
Yes, you are correct. You'll either need to pay for two tickets or buy an AP. The Deluxe is the 'cheapest' available for non-So Cal residents.

Tickets would cost $630 ($700 with MaxPass for all days)
370 adult 5 day hop (add 50 for 5 days MaxPass)
260 adult 2 day hop (add 20 for 2 days MaxPass)

Deluxe AP (but watch for blockout dates!) would be $729 (804.00 with Max Pass added on for $75, although I believe you can add it day by day, so $50 5-days of MP plus the AP would be $779).

Note that you don't have to have MP for all days. You could save money by only having it for a few days of your trip.

The other option (possibly more expensive I don't have the numbers in front of me) would be a 3 day and a 4 door which would get you 2 MMs if you're staying off site. When our trip was a similar length we decided to do APs as we figured we'd save close to the price difference on food and souvies. I even went to a higher level pass to get a 20% discount.

BUT, I would ask if you really want 7 days in one trip at DL. It is a much smaller resort than WDW and my kids would be bored and over it after 3 days in a row, 4 would be really pushing it. There are only 2 parks and only so many times you can see the same thing and be entertained.

When I went in December, I did 6 days by getting a 5 day park hopper with the package and a separate one day non-park hopper in order to have 3 days in each park (I also did a non-park day in the middle), and I loved being able to do favorites multiple times.
