I have the sneaking suspicion that I will be receiving an 8-day park hopper for X-Mas. If so, can I use my DVC discount to change that to an AP when I arrive.

Lucky you! Yes, you can upgrade your 8-day MYW ticket to a DVC-discounted AP or PAP. You'll need to visit a Guest Relations booth at one of the major parks or Downtown Disney to do it, though. The resorts cannot handle AP/PAP transactions at this time.
