Tiana’s Place is there a show or something?

To be honest, Disney is great about food issues. I would go so far as to say that if you explained your food issues to your waited the first night, by the third night he will be ready with the options hat fit your requirements. They are awesome like that.
That’s why I love Disney so much but always at Three amigos/Caracas(can’t remember what they called it on the Magic back in 2010) Anyway I’m hoping they can work it out before the third night.... only on three nights! LOL

You don't say whether you are early or late seating, but another idea could be to eat in cabanas that evening and then just go to tiana's place for desserts. That way you'll get to have a different menu and still get to enjoy the ambience.

Talk to your server and come up with a plan together
Since I’m from Wisconsin I like the late dining time. And thank you for the idea I think I will try to see if I can swing in for dessert there!
 
On the nights that all the dining rooms are serving their rotational (signature) menus, you can usually request an item from a different dining room. On the nights that all dining rooms are serving the same menu, you're pretty much locked into what's on that menu.

Except on show night in Tiana's they serve the Mardi Gras menu. Tiana's basically has 2 signature meals. It's a guarantee they will be serving a different menu in the other dining rooms. Last summer each restaurant basically had 2 signature dinners (T - captain's gala/Alaska, AP - animation magic, TP - Mardi Gras) and then they all had Frozen one night.

Night 1 - Standard Rotational (each dining room serves it's signature menu)
Night 2 - Prince & Princess Dinner (all dining rooms serve the same menu)
Night 3 - Standard Rotational
Night 4 - Frozen (all dining rooms serve the same menu)
Night 5 - Standard rotatational
Night 6 - Captain's Gala (all dining rooms serve the same menu)
Night 7 - Til We Meet Again (all dining rooms serve the same menu)

I understand that is what Scott currently posted, but that's not how it plays out. It's outside of the norm, so I assume he doesn't have a way to shorthand it. Frozen night was the only night on the 7 day Alaska where all dining rooms served the same menu.

ETA - here are the menus Scott has posted. The one he calls Prince & Princess with a twist is the first night in TP and the Mardi Gras menu is the second night.
