using the money to go to a second MNSSHP. Is this stupid?? It is me and my mom going...our first visit to wdw and probably last. I just don't see that the money is worth it for the "experience" of eating in the castle. Do you think it is something that we will regret not doing? I don't want to regret not doing it but also would hate to walk out thinking it was a big waste of money.

I would go to the first party (if booked that way), and if you really enjoy, then cancel your dining reservation and buy MNSSHP tickets for 2nd party.
I've eaten dinner in castle several times and was not impressed with the food. If you have breakfast reservation that food is good and there are lots of children.
