I live in Phoenix and our family lives in Orange area so I know the drive really well. We always stop in Quartzsite for gas and maybe food. If your there for lunch and have time the Mexican food place is actually good and there is McDonalds, Carls Jr, and Burger King if you want to get through fast.
Someone mentioned Cheraco Summit for potty but honestly if you can wait for Cabazon do. There is always a line for the bathroom and its not that clean.
In Cabazon we stop at the outlets a lot and then we also go to Hadley Fruit Orchards, which is by Ruby's. They have all types of snacks (nuts, dried fruit, and what not) and they have a little diner thing and there specialty is date shakes. I love to pick up snacks for the road or at disney. There is also A&W there which is good.
Windmills aren't that spectacular in my opinion and you see a lot of them from the road and if your lucky like I once was you see them for 4 hours while stuck on the 10 waiting for an accident to clear up while trying to get 1 mile to the off ramp.... so I kinda have an aversion to the windmills
