If you are planning to use Lyft, Minnie Vans, Taxi, etc. for getting to restaurants do you still need to plan on 1- 1/2 hours to get to your reservation from resorts or theme parks?

    No.
Just be mindful of the drop off areas. Not all of the options you listed are permitted the the same access, particularly at MK.

I don't. I give myself 30 minutes once in the vehicle...

If you are getting a Lyft/Uber from MK, walk to Bay Lake Tower and get it from there.

From a theme park, you should be fine. From a resort to another resort (both bus-bound), I would give yourself the 1.5 hours. It took us at least that long one time to get from Wilderness Lodge to Animal Kingdom Lodge by bus. (Partially my fault though...we took a bus from WL to AK. AK wasn't open at night back then and it was close to closing time.. the AK to AKL bus waiting area was mobbed.)
