Today I am home on a holiday and planning to mostly relax, maybe watch a movie. Of course, I may not because the darned phone keeps ringing! We have a special election tomorrow to fill Senator Kennedy's seat and the campaign workers keep calling. The phone has rung three times already, and it is only 10:30. This morning I even got a call from the opposing campaign! What the heck??

carejo - welcome! I'm not a fish person, but I do want to try Blue Zoo next time we are in Disney.

Ellen - sounds like you have a fun day planned, enjoy!! Haggis is sheep organs (liver, heart, etc.) stuffed into a sheep stomach and cooked.

Kathy - I'm go thru phases with grits sometimes. But I tend to eat them more when its cold outside, or if I'm not feeling good. We always add something to them, cheese, bacon, ham, just depending on if we are having anything else.

Becky - That steak looks so good! Those campaign calls are annoying. I especially hate when the caller ID lists a different state and it for a local election.

Sounds like everyone is having the same food thoughts!! We had spagetti and meatballs for dinner yesterday. Tonight will be country ribs, rice and mixed veggies.
 
Hi,y'all, I made a crockpot meal I found on the Budget board and wanted to share it. It's really good, easy, and versatile.

Crockpot Chicken with Black Beans and Corn

4 boneless skinless chicken breasts (frozen or thawed)
1 can black beans
1 can kernel corn
1 jar salsa
salt, pepper, garlic powder, onion powder (all to taste)
8oz cream cheese

Put the chicken breasts in the crockpot and sprinkle with the seasonings. (I added this part, so there aren't any measurements.)
Pour the beans, drained, on top of the chicken. Add the jar of salsa then the can of corn, drained. Cook on low for 4 and a half hours until chicken is done. Take out the chicken and shred and put back in the pot. Add the block of cream cheese, stir and let melt together for about 30 minutes.

We put this in tortillas and added lettuce, tomato, jalapenos, shredded cheese, and sour cream like tacos. You can also put on top of nacho chips with the toppings, or you can even just serve it on top of rice. To make it more figure friendly, drop the cream cheese.

I saw this on the budget board! I'm glad to know that it's good! It looked like it might be good for football game days. It sounds like it would be good on chips. What do you think?
 

Good morning, everyone! I'm doing much better today. My throat feels just fine and dandy! I went to part of church yesterday, but brought the baby home early, and I napped while the rest of the family were at church.

The chili I made yesterday was a true hit!!! I was a bit worried about it, because it didn't call for any extra liquid, but it turned out good. It was more of a solid than a soup, and in my family's book, that's just fine! It had really good flavor, and I love the convenience of dump in the crock and go!

I ended up not making the cookies last night. Time got away from me. That's on my to do list for today. The kids are home, so it will help keep them occupied. We ended up watching "The Lion, the Witch and the Wardrobe" last night. I really like that movie, but it's longer than I anticipate. So, it was a late night for us all last night. I was hoping for a bit of a sleep in, but Timothy had other ideas! Oh well, at least he'll nap earlier today!

I'm not sure what dinner will be. I have a salad recipe I want to try, so we'll see what things look like at the store. It's a gloomy day here, so if the salad doesn't appeal, I'll make a soup of some kind.

I like polenta:).......Greg will eat it if I make it into cakes and brown them. I usually put short ribs or some type of stew with it.
As far as grits I love cheesy grits with shrimp!

Bethany, you have me thinking King Cake again. I'm going to visit a cupcake shop that everyone is raving about & bring some home for Em.
Last night when I was walking to pick her up I passed a cheese shop that was so beautiful that might also be part of the plan today.

I have to walk her to the theater, go back in 2 hours with her lunch, stay throughout lunch then I'll clean this place up, maybe do some shopping & then walk back & pick her up at 6.

I have never tried polenta, but I love cream of wheat and I LOVE grits. I had them the summer I stayed with my brother and sis in law in S. Carolina, and fell in love. I eat them like my niece, they gotta have cheese on them, mmmm!

Nancy is right we are getting nailed with this storm, with small breaks here and there it is going to snow into Wed. It is making me really really looking forward to vacation. The good thing is looks like we have nice weather to fly out on Friday. I really hate delays due to snow or sitting while they de-ice the wings.

Ross is still feeling bad, his ear hurts pretty bad (right), sore throat and a cough. No fever though!! He is also eating non-stop!! Good thing I am crazy about him, as he is very demanding, at this rate I won't get packing done today, but will put food in his belly non stop,lol.
We go to the Dr at 3:45. Kris is coming home to take us, as we live on top of a big hill and he doesn't want me taking my car down it. He is coming home tomorrow as well to take me to my nail appt and sit home with Ross until I am done. Even if it stops snowing our roads won't be cleared for a day or two.

Supper is sausage peppers and sauce over pasta. (mine will be over spaghetti squash.
 
hello...I am taking a quick break browsing...just wanted to tell Wendie to give Ross a big hug for me and tell him I hope he feels better.

I will BBL...I need to re-group after my whirl wind trip to VT...if I get my mo-jo back!

Not sure about dinner...we have a couple leftovers in there...I maybe just have some pasta. We'll see!
 
Welcome carejo and Shelby's Mommy! Carejo, we have been meaning to try BlueZoo for years. Every trip we have it on our list of places, but every time we have ended up canceling the reservation or scratching it off the list. We'll get there someday!

You are assuming that he is logical:rotfl: He would take one look and pass it over. You should have seen his face when we were at Mara in AKL. Our first day we got lunch there adn he ordered some chicken dish over couscous. He had no idea what cous cous was but saw chicken, the plate looked substantail and he wa starving. Oh my goodness! His face was priceless when he saw it under his chicken. It was delicious but he never got past teh look and has decided he hates it. Now this is fromt eh same man who continues to tell everyone he will eat everything but liver and asparagus :lmao:
 
Torrie's Blueberry Buckle

This is from a very old cookbook. According to this book the dish was served in the White House during George Washington's time

3/4 cp sugar
1/4 cp butter (soft)
1 egg
1/2 cp milk
2 cp flour (she used 1 cp WW flour)
2 tsp baking powder
1/2 tsp salt
2 cp blueberries

topping
1/2 cp sugar
1/2 tsp cinnamon
1/4 cp butter (soft)

375 for 30 to 35 minutes

she said mix it all up, top with topping and bake. She is a fabulous baker and follows steps without thinking about them. She doubled the recipe and used a 9x13 pan

I would:
combine dry ingredients
cream the butter and sugar
add the egg and beat
add milk and flour mixture alternating
fold in blueberries adn put in greased adn floured 8x8 pan
mix topping ingredients until crumbly and top cake

There was a knock on our door early Christmas morning and I thought it was my mum but it was Jehovah's witness's....:eek:...Im sorry but I was very angry,I found it very disrespectful.

Lucky for them Santa had been good to me lightening my mood so I just smiled and said I was late for mass so couldnt talk.

I was born and raised Catholic and I respect every ones right to their god and religion and all I ask is the same back...........

Hello all, hope you all had a nice weekend.

The polenta is making me laugh, my mother in law makes if often and one day my husband announced "Robin hates polenta." I swear she makes it more often now, and I don't hate polenta, I hate her polenta. Cornmeal and water, that's it. No salt, broth, milk, butter, nothing. It's always way to thick too, thicker than if you were going to slice it.

Nancy- That sounds like a friend you should lend platters to more often! Have fun coming up with ways to use your cornmeal.

Wendie- Hope Ross is feeling better, at least he's getting it out of the way before your trip.

Copycat olive garden soup for dinner tonight, and a big salad. I made the dressing from 'Ohana last night and they both loved it.
 
Robin, I don't think I would like your MILs polenta. I guess I should have added I like it with the herbs butter & cheese.
