The What's For Dinner Thread - November '09(recipe index in OP)

I found a class!!!! It's Monday and Wednesday mornings from 7 to 8 a.m. Best news is that it's here in my town. I can do the Monday morning classes until the end of February, and then I could feasibly do both days from then on! I'm calling the instructor to see what she is charging and I'll go from there!

That's great! The company I work for has gyms that do Zumba and I want to try it but I really think I need to lose a bit before I attempt it. I am okay with light workouts, something more strenuos I would be afraid would kill me! :rotfl:

Dinner tonight is whatever I can find in the fridge. I was hoping for a snow day today and didn't bother with anything last night. We got another 2 inches of snow last night. Not to big a deal, it was really light and fluffy.

Ann, I have missed you around here.
I'm ok.......coming down with something but ok.

Wendie, safe travels.....Sounds like you have a great day planned tomorrow:goodvibes I'm so glad you worked something out for your trip!

Robin, lunch looked great!

Lauren, continued prayers for your DB.

Vickie you raised a great young man, his words warmed my heart:lovestruc

I made chicken parm sandwiches tonight.....

Making spaghetti w/tomato sauce with garlic bread and a salad.

I woke up this morning with a cold. :cheer2:not! I don't do the sick thing well.

Happy Anniversary Wendie!!

Bethany - Are you weighing yourself at the same time every day? I do, first thing in the morning. Hang in there, you're on the right track!

Yes. It still jumps all over. :confused3 Although, the jumps are worst if I do happen to weigh myself in the afternoon/evening versus the morning.

I suppose...dinner tonight was NOT though! Went to Cane's. That stuff is bad for you but it tastes pretty good. AND I had a Coke (for the first time this year). :headache: Oh well. I have not been working out this week because of the weather and this stupid respiratory stuff going on.

He was so amazed AND touched,in his words....." Mum,there are really nice people in the world and you know them !! "

Thats a big :thumbsup2 from a 9 yrs old boy me thinks.

That is awesome! :goodvibes And Maria, that was very sweet of you!

A couple of my diet things that work (if I can only get back on track)...lots of water, weight watchers zero point veggie soup, water, and eating 6 meals a day...I am trying to do a modiefied WW and diabetic diet. I am also trying to exercise at least 3 xs a week and about 10 min after dinner (that is what the dietician recommended when I had gestational diabetes). For that 10 minutes I lift light weights, squats and march in place. A and T think its amusing. I need to get my but in the gym next week.

Well, I need to go for more bloodwork...my cholesterol was a bit high when pg and then I never went to a GI for the other problem...not sure if I told you guys but when I was in the hospital with T, they tested for something by mistake and it turned out that I have it!!! :scared1: Its Porphyria...not really sure what that is all about but need to make an appt. I also want to talk to them about some other family history things...

My DB has been taken off the vent and oxygen but is not really responding...the docs are talking about brain damage. I just hate the thought that if he had insurance, they would have found the swelling sooner and not treated him for the wrong thing all the time. :sad1:

I've been drinking a lot of water. The 6 meal thing is kind of difficult on a teaching schedule. Here's the thing. In NYC I could eat pretty much whatever I wanted, I wouldn't gain weight because I walked so much and was very active at work. Found out pretty quick that strategy does not work so well down here. :rolleyes1

Then I realized I was snacking a LOT and eating too much at each meal (portion sizes). So ... cut back on portion sizes to roughly what they should be, and cut back on the snacks (primarily salty cracker/chip type stuff). And cut out the soda - that will save about $50 or more a month too! It's GOT to budge at SOME point!

I hope you get some answers on your medical stuff. That can be scary. I guess that test was meant to be.

And I agree with the others. Try not to think about the "what ifs". That won't help things, just make them worse.

Hey my beautiful friends!! Sorry I have been MIA...tough month and the stress of vacation issues, almost a panic attack feeling I guess. I think we have figured out a way to go, by taking from the home improvement account, as there isn't any real issues that need to be done right now,and if something does come up between now and March there should be enough left in there to cover it.
That being said..if I mention vacation on FB please don't make note of the issues we were having about going. My MIL knows none of it, and her mouth is not one I need flapping, she is such a PITA!

I have not had a chance to read back other then to skim the last page somewhat.....but to Maria, Kat and all who have said something on here or FB thank you so much for the Anniversary wishes...I woke to a beautiful card and 17 (16 for years married and 1 more for years together)long stem multi colored Roses on the nightstand, and a very sweet card. We are going out tonight for dinner, then tomorrow Ross is going to the inlaws for the afternoon and night, Kris and I are going to do a bit of zig zaggin around the state to some favorite spots.(portland, bar harbor, bangor etc) We can't have Ross sleep over there tonight as he teaches karate in the morning.

I am glad that you found a way to go on the trip. I hope you all have a great time.

That is so sweet! Enjoy your outing!

Here is a lesson in boiling water....turn on the stove!:rotfl2: Just placing the pan of garlic bread on top of the stove does not warm them up either they need to be placed in the oven you were warming up.:rolleyes1

I think after dinner I am going to sit in a warm bath and go to bed early.:thumbsup2

I must be getting better at this stuff.

Hey y'all,

Robin, I'm so glad you've started posting pics!! That frittata is a thing of beauty!:thumbsup2:goodvibes

Vickie, You always crack me up! :rotfl2: Your diet rule is to not mix real food in with the crappy food! :lmao:

The Boy is a sweetie! I really wish Maria could have been there to meet him!

Maria, He is as sweet as his words!:goodvibes

Wendie, Have a good time with your honey this weekend! It always sounds like you found a truly wonderful guy!

Lauren, I praying that you get all of the health issues sorted out. I've also been praying for your brother & will continue to do so.:flower3: Please don't start beating yourself up with the what ifs, you can't fix it & the worry won't help you're health either. Have fun with your friend!

Bethany, Keep up the hard work!:thumbsup2 You are going to start seeing results very soon!

Thanks for all the kudos on the coq au vin! I wish my picture taking skills had improved along with all the cooking I've done these last few years! I'm still so happy to have found the WFDT! It has not only improved my cooking but also improved my life with lots of dear friends!

Lunch was soup, dinner will be leftover coq au vin with a bottle of chardonnay & a fire! But I am inspired by all the diet & exercise talk. I've been doing arm & shoulder work with a little weight at PT & at home each day. The dr should be calling on Monday with the results of my low back MRI. I'm hoping it will be okay & I can start PT for that. I'm dying to get into my DD's new gym. I'd especially hope to be able to eventually join some of the classes they have. There are 3 that I think I would like, zumba, yoga, & pilates! That's my goal for 2010. But now I'm going to go get on the treadmill before sitting down for dinner, wine & movies with the hubby!

Baked fish and chips. Cod with a cornflake breading and baked.

Ooh...that sounds good. We had the traditional fried fish and chips here tonight (I know I said it was fish tacos, but Caili wanted fish and chips) and I feel a bit gross.

Laura- Are the prices at fish markets the same as the grocery store?

It really depends. Sometimes they are better, especially with higher end fish (wild salmon was $12.99/lb yesterday) but they don't have the sales the supermarkets do. I am willing to pay more for the freshness though. The haddock we had tonight had just come in from the dock.

Your daughter and mine sound like such similar creatures. Caili informed us when she was three that she no longer required naps, so she went from napping nearly two hours a day to never napping, overnight. She also told us when she was ready to potty train and never had an accident.

I did read a cookbook once. It is interspersed with stories about the food. Read ALL the stories, and NONE of the recipes. :rotfl:

You would probably like the cookbook Beck gave me for Christmas. It is The Pioneer Woman Cooks. The stories are very entertaining.

I WANT TO TRY ZUMBA!!!!

I'm glad you found a class nearby. It really is fun. I haven't been in a month, and I expect I will be feeling that tomorrow.

Marilyn -- Most instructors offer you a low impact or high impact choice in the zumba class, so you could just do the steps and get a good workout, but not as strenuous. My classes have a wide range of ages, sizes and dance ability, and everyone seems to get something out of the class.

Laura - What should I title your dish in post 1429?

How about Seared scallops with rice noodles and Asian vegetables?

Lauren -- Andrew will probably eat the right things just out of necessity. Getting things stuck in your braces or having foods pull at the braces is really uncomfortable. I hope everything is okay with you! As for your brother, I can not say things any better than Nancy.

Laura- I forgot earlier, the speedy pot pie was good, but not great.

Thanks! I wasn't sure if it would be worth messing with my usual recipe.

I have no advice on potty training. I need some of my own.

Don't worry about it Ann. I know it stinks (literally) but little boys have their routines and it takes a while to break them. I tried some of the tricks suggested to get Liam into a different routine, and they just didn't work. When he was ready, he was ready.

Janice -- I hope you feel better.

Wendie -- Happy Anniversary!!

Tomorrow is an All-About-Caili day. She has a skating competition and I told her I would take her to the American Girl store afterward to spend the money she saved from Disney. I think she is more excited about tomorrow than she was at Christmas. She has been jumping up and down since Wednesday.

Liam is being spared from the shopping, but he'll watch Caili skate tomorrow. He is spending the night with Beck and my parents. This also saves him from having to return to the rink on Sunday for Caili's team competition.

Have a good weekend everyone, and I will at least jump on here tomorrow night to let you know how Caili did. For those on FB, I am planning to video because Greg has never seen her skate this program, so you can check that out if you want to as well. You'll probably recognize the music as part of Wishes. :)

Glynis – Glad you found a class, I’d love to give it a try!

Ann – We are all slackers at times my friend, it’s very hard to keep up especially for you with two babies!!!!! DMIL is still having a very hard time.

Maria – Hope you’re not getting sick, take care my friend.

Bethany – I never weigh myself at any time other than first thing in the morning. Canes isn’t good for you but as long as you don’t eat it that often, enjoy it!!!!!!!! With this cold weather we’re having it’s hard to get proper exercise and we all tend to want comfort foods, so go easy on yourself, especially since you’re sick.

Janice – Hope you’re feeling better. Your cooking instructions that were on Bethany’s level were too funny!

Sheryl – Sounds like you and Bob are going to have a great evening, enjoy my friend!

Laura – Wishing Caili good luck!!! Can’t wait to hear how she does and see the video. I hope Liam enjoys his time with Becky and your parents.

Vickie you raised a great young man, his words warmed my heart:lovestruc

Sheryl did you see "the boys" pic on FB????

I had a hot toddy & it didn't help at all, I'm officially sick:sick:

Emily had a huge moment yesterday........Her name is now associated with the show & has appeared in print. She will also be in the playbill so she's on cloud 9.
Only one of the kids in the show are from the Chicago area so all the kids are bonding & learning together. When I talked to her last night she said earlier in the day while dancing she realized her dream had come true.....:lovestruc

After my 3 hour nightly nap (:rolleyes1) we went out for sushi. It was yummy!

Bethany & Aimee, how are you girls feeling?

I still have some sinus pain and congestion, but it's mostly better. Some of the congestion has moved down into my lungs though. I notice it primarily first thing in the morning, but it's a little concerning. I'm keeping an eye on it. I am still on the antibiotics (for 5 more days I think) and I'm taking Mucinex D and a lot of vitamin C.

Honestly, I think the cold is part of it.

Thanks for asking.

Maria, I loved reading about Emily's realization. That is incredible at her age. She should really be happy and proud.

Dh will be home tonight to watch a basketball game and mentioned ordering pizza. Who am I to argue.

Going grocery shopping with DM today. BBL, have a great day all. Everyone sick please rest and get well.

Good Morning Everyone so sorry I wasn't on much this week.

Boy what a week, normally work 20- 23 hour week and this week got 43 hours. Yeha nice big pay check but my body isn't use to that and my house sure shows it things still aren't put away from trip. So time to get moving on straightening up this house.

Bethany- you watch that infection settling in your chest I don't want you to end up with pnemonia my friend

Lauren- You take care of yourself. Hows the house coming? (Both houses)

Ann- My Brandon had problems also with potty training and the bowel movement. I know it's hard but patience it will come it sounds like he is doing an awesome job with it. Figure out what really excites him then bribe him with it. I just can't get over how adorable your kids are.

Kathy- I think and worry about you I hope things are going better for you in all areas.

Aimee- I was glad to see your setting up an appointment to look into surgery. You take care of yourself and take it easy.

Maria -Emily has every right and should be proud of herself good for her.:cheer2:

Glynis- I'm so glad you found a zumba class. My friend I drive bus with loves her zumba clas and goes twice a week and has a ball. Good work out.

Laura- Praying Caili does well. Can't wait to hear.:cheer2:

Janice -I hope you start feeling better real soon.

Hope Everyone has a wonderful day. :grouphug: to you all.

Good Saturday morning.

Well, Alan and I went out last night. We went to Bajio for Mexican food and both ended up with salads. I had a half salad, and only ate half of that, and Alan had the regular salad. It was really good!!!

After dinner, we went to see "Sherlock Holmes". Can I just say that I think Robert Downey Jr. is yummy? It was a really good movie. I have read the Sherlock Holmes books, and this was a very good plot line! Loved it!!! Alan did too, so it was nice to be able to enjoy one together.

Nothing much on tap for today. I've got to finish reading my chapters on Medicare/Medicaid reimbursement policy and the law regarding all the changes. Can we say "boring". However, it has to be done, so I'm locking myself away in the office until it's done. Alan will muster the troops to get the house ready for the weekend, and then come up with something fun to do as a family after that.

I have no idea what we'll have for dinner, yet. Got to see what's in the freezer and pantry. If I can't find anything, we'll make a stop at the store for today and tomorrow's dinners.

Have a great day, everyone!

Congrats to Emily! Hope you feel better soon. It seems that everyone is getting so sick lately!

Here is a picture of the chicken noodle soup I made earlier this week:

And last night's roasted chicken. John made it! (well sort of, I cleaned and seasoned it, and he roasted it)

He was very pleased with himself and said he might want to try and make some other things. :thumbsup2
