The What's For Dinner Thread - May '09(recipe index in OP)

Ann - I hope you are well and you find your routine with the kids.

Dinner tonight will be the first meal that wasn't "throw it together" like the one's we've had since Thursday. I'm making a shrimp risotto.

And really, really, really, looking forward to vacation.
 
Kathy, I am glad that you are feeling a little better. Aimee and Maria, I hope you are both feeling better today also.

I forgot that I had a hair appointment after work yesterday, so dinner ended up just being BLTs since we were not eating until 9 PM. Not sure wfd tongiht--I have been craving salmon, so I might stop and pick some up.
 
Good morning all. I'm sorry that many of you aren't feeling your best. I'm enjoying reading about food and wine festivities, it sounds like you are all going to have a great time.

Ann- I can't believe Emma is a week old already, she sounds wonderful. Mine turned 9 on Monday and I'm still trying to wrap my head around that one. I wonder if it ever really sets in, probably when she heads off to college.

Vickie- I'm still getting used to being back to work and it's been over a month. I'm pretty beat by the end of the day. I had a 3 hour canoe trip and that wiped me out. I really enjoy working, but I'm tired. I'm sure we'll both adjust soon.

I don't know what's for dinner, but like Gretchen it's going to be a real meal. Complete with starch, protein, and a veg. I'll figure it out when I drag myself to the store.

Merle Do you have a hardware store nearby? That's were I go. I've seen canning jars in some of the grocery stores also.

I wanted to suggest a hardware store too, I have seen them there on occasion

That is where I am headed tonight. I know in the past I have seen the jars I need at both WalMart and Target but neither one had the little jelly jars. I take that back, WalMart had a set of 4 fancy jars for almost $4. :scared:

Not sure about dinner tonight but it will have to be quick and easy, I have a lot of jelly making to do. Tomorrow night I am going to my cousins house, his sister is going to cook something on the grill and we are going to float around the pool for a while.
 
Yesterday was a long day but it was nice. Weird because losing Jean should not be joyful and somehow it seemed so right that she was with Bill. They had one of those marriages that you don;t see often, he adored him and she fussed so much over and at him. He thrived on that. Anyway, by choice she always stayed in his shadow so Donny said it was fitting that most of our conversations drifted back to Bill even as we celebrated Jean. They were that intertwined :lovestruc

Maria, I am game for all the events...I believe everything is still OK with Charlene too.
Hoping Charlene is OK, she hasn't been posting much lately.

Are you sure you are feeling well enough to handle the F&W adr's? Since Vicki has offered to book Cali Grill maybe you shoul let her handle that one. She can make ressie's first and we'll have a very large group. I would offer to do it all, but I realized last week or so, that my booking day is the day after my surgery. :sad1:

Maria - Whatever you decide to do is fine with me, might be a good idea to take it slow.:hug:

SIL is flying in today to help with childcare while my parents are on a 3.5 week vacation (I know, nice, right?) And my hubby, instead of getting a high school/college girl to watch the kids 2 afternoons a week, is flying his sis in this week, and his mom next week. I'm kinda like :rolleyes: but if that's what he wants to do and it's not gonna put us in the poor house, so be it!

How's the unloading going? Wish I were feeling well enough to help out.

Tomorrow night I am going to my cousins house, his sister is going to cook something on the grill and we are going to float around the pool for a while.

It is! She and I use to use these net chair things, they attached to swim noodles, and the current from the filter would just move us in circles around the pool. :cloud9: The nets disappeared. :mad:

On top of that neither one had jelly jars.
I hope you find them. It seems like whenever I need them, I can never find any, but the middle of February, the shelves are filled with them.

That was the roughest thing about All Stars the first year Deb played. The coaches did not know her, she did not play much and she sat out a lot.

That would be the case if Liam had been selected for the really competitive town team, which was why I was relieved when I found out he was going to be in the more recreational league. He should be one of the better players on this team, if given the opportunity. He has another game tonight, and it looks like the weather is going to cooperate, so hopefully, he'll get a chance to play.

Nancy -- Jean and Bill sound like a wonderful couple. I am sure they are happy to be reunited. I would eat the bread and your meal...sounds delicious! Enjoy your time with Chris.

Sheryl -- I am glad everything worked out yesterday. It sounds like a fun day! That was nice of your neighbor to offer to take Alexis while you have your appointment. I hope Alexis had fun.

Stephanie -- I hope you had a nice relaxing time at the pool. Your husband is a thoughtful guy!

Kathy -- I'm glad you are feeling a little better. Take it easy. I don't know what to tell you about PF Changs...that type of food always tastes good to me, but my stomach isn't a fan. Maybe soup?

Aimee -- Wow, you really have your hands full at camp. I hope you were able to straighten things out today. I also hope you're feeling better.

Last night we lost power & they are questioning if we had a tornado come through???? In NJ?! Some property damage but thank goodness nobody was hurt.
The storm was horrible & very weird, the news trucks have been in the neighborhood all day & the guys are still cleaning up outside.

Tonight we will be setting the alarm for Tylenol & Motrin every 4 hours. This morning I woke up again with 103. I forgot who asked if I have antibiotics & they didn't give me any because all my blood tests were negative.
The hospital called for follow-up today & Greg told them what was going on & they said I can't wait the 7-8 hours for meds, they have to be taken round the clock.

Laura - I don't think I would have had the presence of mind to have my husband take the frogs and crickets back to the store. I probably would have thrown them in the trash! Frogs creep me out, and crickets run a close second! I'm so sorry that Liam is having a rough time with this baseball team. I know that if you need to play "mama bear" you will. How long will Greg get to stay home?

Lauri - How are you feeling? I'm so glad your doctor stepped in and became the "bad guy" for you. Sometimes, it's much easier that way!

Lindsay - How are you doing? Sounds like you were going through a rough time for a while, based on your FB posts.

Gretchen - I hope your anniversary was wonderful! I'm so sorry that your dad is having a rough time. He continues to be in my prayers.

Well, I had a wonderful time at my father's house. We saw 6 fabulous plays, and on the last night we were there, a bronze plaque dedicated to my mother was presented. As we left town, it was being installed on the wall of the theater. It was truly wonderful! I have some pictures I'll try to upload.

We didn't eat anything fancy, but we did have a good bbq for the 4th. Other than that we ate chicken salad, taco salad and tuna salad. It was much too hot to cook!

Dinner tonight will be Peanut Chicken Tenders with Thai noodles. I'm grilling the tenders, so I don't have to heat up the house!

Tomorrow is Katie's 12th birthday! I can't believe she'll be that old! For her birthday dinner, she's requested Cornish pasties. Guess I'm going to be trying them out!

I think we have some good news to share. Looks like we have Section 8 renters very interested in M&D's house. They are relatives of one of the ladies that lived in the house while taking care of Mom. I had no idea the house could stay on the market while being rented or we would have done this a long time ago.

I have a pilonidal cyst-anyone familiar with them? I dealt with them years ago, had surgery to remove them, but they return when I start to flare. My GI called in an antibiotic but it's too far gone now. It's hard for me to sit and bend over, and it'll start draining soon :scared: It's put a damper on things this week to have ongoing pain in addition to the Crohns issues but what can you do? :confused3 Hopefully the antibiotic will clear it up in a week or two.

The kids were MUCH better behaved today as we threatened them :goodvibes Seemed to work! My volunteers went home much happier today.

I am making a frozen cheese pizza for dinner.
 
Aimee Try sitting in a warm bath. Not exactly practical while at work but at home give it a try. Hopefully it will go away soon. :hug:

Yes, I guess so. Dad has been in the hospital since Thursday although we received word that he may go home this Friday. I've been reading along this whole time but as I explained to Kat in a PM, I hated to post since I had nothing else to talk about. I have begun to feel like Debbie Downer here and like I was taking far more from all of you than I was able to give back. I just didn't want to keep going on and on about my Dad and maybe driving you all nuts with it.

Anyway, now that he is feeling better and we don't have to keep watch over him, my life is more back to normal.

Mine don't. Although if the truth be known, they would prefer the fast food ones. :confused3

And congrats on renting the house. Don't forget to save your receipts for repairs, etc., since they are now deductible against the rental income. :thumbsup2

I'm not familiar with that type of cyst but I can only guess based on what you're saying. I hope that antibiotic works quicker than a week or two. I don't know how you can work. :hug:

Hey y'all, I'm tired from being at the dr & hosp. all day. I have a bad sinus headache, but the PA gave me antibiotics so I can be well for the surgery.

Maria, That's quite hard to get rest & get well when you need the meds every 4 hrs!:hug: More prayers! On the f&w adr's, how did I know you were going to be so totally organized!

Kat, I pray that renting will work out for you! I hope lunch didn't mess up your tummy!

Aimee, I don't know what that is, but I'll be praying for you! :flower3:

Alexis is sleeping over, ( I had promised we do this before my surgery & her camp. Tonight is the only night we can do it.) Dinner is take out sandwiches for us and takeout chinese rice for her! We'll be watching her choice of movies and popping popcorn later.

Here is the pulled pork shoulder recipe I used on sunday it was awesome :thumbsup2

8 lb pork shoulder

Rub

1 c brown suger
1 tbsp red pepper flakes
1 tbsp dry mustard
2 tsp garlic powder
2 tsp onion powder
2 tsp paprika
1 tsp marjoram
1 tbsp lemon pepper

Drip pan ingredients
4 springs rosemary
1 c white wine

Mix the rub ingredients together in a med size bowl. rub evenly all over pork shoulder. Place shoulder in a large resealable bag and refrigerate overnight or up to 24 hours.

remove shoulder from the bag and set it aside and let it come to room temp.

Prepare grill. Place drip pan underneath grates on one side of the BBQ and rosemary to drip pan. Preheat grill unsing indirect heat. Leaving heat off under the drip pan.

Place pork on the cool side and cook slowly 5 1/2 hour on 220 degree med heat.
 
I am also sharing the mouse filling that is a copycat from the Costco cakes

1 c heavy whipping cream
1 c milk
1 large package of jello instant pudding

Mix well with hand mixer.

Chocolate add chocolate syrup or chocolate pudding mix
for fruit flavors use vanilla pudding and add any preserves you like.

I really like the white chocolate and pistachio flavors

This makes a very generous amount of filling.
